Date tamarind chutney is a sweet chutney which is used in Chaats. It is made with dates, tamarind, jaggery and some chilli powder, roasted cumin powder, dry ginger powder etc.

Let us have a look at the date tamarind chutney now:
Ingredients:
Jaggery - 1 1/2 cup
Tamarind - 1 cup
Seedless brown dates - 1 cup
Red chilli powder - 2 tsp
Roasted Cumin/ jeera powder -1 tsp
Dry ginger powder -2 tsp
black salt 1 tsp
salt - 2tsp
roasted fennel powder (badi saunf) - 1 tsp
Method:
Soak the tamarind and dates in one cup warm water for an hour.
now pressure cook the same for 3- 4 whistles by adding 2 cups water.
melt the jaggery, remove the impurities
grind the date tamarind pulp to a smooth paste.
add the jaggery in it and pulse it for a minute.
now strain it remove the pulp fully in a vessel and discard the fibers
Put it in the extracted pulp in a vessel, add the salt, dry ginger powder, roasted cumin powder , red chilli powder, black salt, fennel powder and boil the same till you get a saucy consistency. If need be can add little water.
cool it and store in bottles in the fridge.
spices adjust according to your requirement. consistency can be adjusted by adding hot water at the time of using the same. if it becomes thick.
