FRIED RICE

Fried rice is made withe some mixed vegetables, soya sauce and pepper powder.  It is another way of making the children to eat the vegetables who are reluctant to eat vegetables viz. carrots, beans etc. You can serve this vegetable manchurian, gobi manchurian etc.

Let us have a look at the recipe now.


Ingredients:

1.  1 cup - Basmati rice
2.  1 tsp oil for cooking rice

3.  1/4 cup  finely chopped beans
4.  1/4 cup finely chopped carrots
5.  1/4 cup finely chopped capsicum
6.  1/4 cup thinly cut cabbage
7.  2-3 spring onions with green finely chopped
8.  2 tbsp garlic finely chopped
9.  1" ginger piece finely chopped
10.  3 tbsp olive oil

11.  1 tsp vinegar (increase  if you want more)
12.  2-3 tsp Soya Sauce (i used dark one)
13.  Salt, pepper powder as required (i used black pepper powder)  You can use white pepper powder too.

Garnishing:

1 - 2 tbsp of greens of spring onion.

Method:

Wash and soak Basmati rice for 15 minutes.  Boil sufficient water and add the rice in it and cook with the oil.  ensure that the rice is not over cooked.  drain the water and put the rice in plates so that the grains are separate and do not stick.

Heat oil in a pan, add the garlic and ginger, saute for few seconds.  Then add the beans and fry for few seconds followed by carrot, capsicum, cabbage and spring onion white.  The vegetables should be cooked in high flame, continuously stirring,  should be crunchy, do not overcook.  Now add the cooked rice, soya sauce, vinegar, salt, pepper and mix well.  garnish with chopped greens of spring onion. serve hot with vegetable manchurian.
