Barley soup is made with barley, moong dal or oats and some vegetables. It is quite healthy as well as having medicinal values.
Barely has medicinal value. Barley is used for lowering blood sugar, blood pressure, and cholesterol, and for promoting weight loss. It is also used for digestive complaints including diarrhea, stomach pain, and inflammatory bowel conditions.
Some people use barley for increasing strength and endurance. Other uses include cancer prevention and treatment of a lung problem called bronchitis.
Barley is applied to the skin for treating boils.
In foods, barley is used as a source of vitamins, carbohydrates, proteins, and fatty oils.
If we are having fever and have problem in passing urine, my mother always used to give us barely water to drink. Recently when I was making barley water, my husband came and told me to make some soups for him. A healthy soup is prepared for him which i am sharing with you all.
I was preparing the barely water so it struck me to make use of the same since it is healthy too.
Here is the recipe.
Ingredients:
2 tbsp barley
1 tbsp moong dal or oats
1/4 cup vegetables like beans, carrot, cabbage, broccoli, cauliflower, corns etc. as per your choice
salt
2-3 garlic pods
pepper
1 tsp ghee
lime juice
Method:
wash and chop the vegetables
Dry roast the moongdal or oats till slightly brown.
cook the barley and moongdal, garlic in pressure cooker with one cup water for one whistle. if you are using oats, just grind it along with the cooked barley and strain it.
when the pressure comes down, take out and grind to a fine paste, strain and keep aside.
now saute the vegetables in ghee mix with the the barley and moongdal water or barley and oats water.
add salt and boil for one minute.
add pepper powder, lime juice and serve hot
If you want can add little butter and bread crumbs.
