VEGETABLE MANCHURIAN

Vegetable manchurian is prepared  with carrots, beans, capsicum, cabbage and spring onion.  This can be eaten as it is or added to  a gravy and serve with fried rice.  It is a delicous accompaniment for fried rice. fried-rice.html

Let us look at the recipe now.

Ingredients:

1.  1/4 cup cabbage finely chopped
2.  1/4 cup beans finely chopped
3.  1/4 cup capsicum finely chopped
4.  1/4 cup carrots finely chopped
5.  3-4 spring onion finely chopped - white  (keep the greens for garnishing)
6.  3-4 garlic finely chopped
7.  1/2" ginger finely chopped
8.  2 green chilli finely chopped
9.  3 tbsp maida (refined flour)
10  4-5 tbsp corn flour  ( adjust according to the binding consistency)
11. salt to taste
12.  oil for deep frying.
13.  1 tsp black pepper powder (optional)

For the sauce

1.  1 onion thinly sliced.
2.  2 tbsp oil
3.  1" ginger finely chopped
4.  4-6 cloves of garlic finely chopped
5.  1 or 2 green chilli finely chopped (optional since we are using chilli sauce, if required you add)
6.  2 tbps soya sauce (i used dark one) you can use the light one also
7.  finely cut spring onion greens as required.
8.  salt, sugar
9.  2 tbsp chilli sauce
10.  2 tbsp tomato ketchup
11.  1/4 cup of chopped carrots, beans, cabbage, capsicum (optional)I added this in the gravy.
12 salt as required
13.  3 tbsp corn flour mixed in water.
14.  1 tsp vinegar

Method:

Making veg balls

In a wide vessel put chopped carrots, beans, cabbage, capsicum, spring onions, green chilly, ginger
add salt, maida, corn flour and mix well.  after mixing take some vegetables in your hand and make a ball out of it.  If you are able to make the same without breaking, the consistency is ok.  It should have a binding consistency.  If not can add more cornflour.

Make balls out of it and keep aside.  Heat oil in a pan and fry the balls in sim gas till golden brown and transfer to kitchen towel for removing the excess oil. fry only 4-5 at a time.

Making Gray

Heat oil in a pan and add the ginger, garlic green chilli saute for few seconds.  Add the beans, carrots, capsicum and lastly cabbage and saute, it should be crunchy, do not overcook. Now add the soya sauce, chilli sauce, tomato ketchup and saute.  add one cup water and cook for a minute.  add the corn flour mix vinegar and mix well.  allow to cook till the gravy thickens.  garnish with chopped greens of spring onion.

While serving heat the gray and put the veg manchurian in it and serve hot with fried rice.
