VADA PAV


Vada Pav need no introduction.  It is a staple food of Maharashtra.  In each knook and corner, you will see one stall of vada pav, vada bhaji, Samosa pav and we love it at any time.  Vada is made with potato and masalas, made small ball out of it and dipped in the chickpea flour batter and deep fried.  served with lasoon chutney, green chutney and fried green chilli with Pav.

Let us look at the recipe now:


Ingredients:

FOR VADA

1. 3 large boiled, peeled and mashed potatoes.
2. 4-5 cloves Garlic
3. 2 Green chillies
4. 1/4 teaspoon Turmeric powder
5. a pinch Asafoetida
6. 1 tablespoon Lemon juice
7. 1/4 bunch chopped Fresh coriander leaves
8. salt to taste
9. oil for deep frying
 10. 4 pav
11.  1/4 tsp cumin seeds
12.  1/4 tsp crushed coriander seeds.
13.  1 tsp garam masala (optional)

Ingredients for Batter.

1. 3/4  cup Gram flour (besan)
2. Soda bicarbonate a small pinch (optional) I did not use it.
3. 1/4 teaspoon Turmeric powder
4. 1/4  teaspoon Red chilli powder
5.  a generous pinch of ajwain (normally it is not put but i used to put it)
5. salt to taste
6. 1 tablespoon oil


Method:

Preparation of Potato Masala

1.  Heat oil in a pan
2.  Add the cumin seeds, crushed coriander seeds
3. when the cumin seeds, coriander seeds  are done, add the crushed garlic, chopped green chillies, asafoetida (you can also crush the green chilli and lasoon together and put it)
4.  now add the mashed potatoes, turmeric powder, salt and mix well.
5.  when it is done, add the coriander leaves, lemon juice,  garam masala mix well and remove from the gas.

Preparation of Batter.

In a bowl, put the gram flour, ajwain, turmeric powder, red chilli powder, salt and mix well.  heat the oil and mix with the flour.

now add water to make a dosa batter consistency.  remember the batter should not be watery and should not be too thick.

Preparation of Vada

Now make balls out of the potato masala.  size can be according to your wish make it small or big.  I prefer always small lemon sized balls.  Heat oil in a kadai.  dip the balls in the batter and drop them in the hot oil.

fry them till golden brown.  Slit the pav apply some green chutney, put some  dry lasoon chutney and place the vada in it.  serve hot with fried green chilli.


You can serve it with sliced bread and bread roll too
