JUNGLEE SANDWICH




Junglee sandwich is  one of my favorite dish  for breakfast or as evening snacks.  It is very easy to make if you have some vegetables and curd at home with bread.  It is a healthy snacks, quite filling and will be liked by the children as well as adults.  Once you eat this, then  it  is DIL MAANGE MORE.



Now let us have a look at the recipe.

Ingredients:
12 slices of bread (makes 6 sandwiches) (i used brown bread)  It looks nice with white bread.
6 tablespoon curd
2 green chilli (according to spice level adjust)
1 medium size carrot
1 medium size cucumber
1 medium size onion
1 medium size tomato
2-3 slices of pineapple
¼ tsp mustard powder
A generous pinch of sugar
Salt
1 tsp olive oil
2-3 tbsp Chopped coriander leaves

Method:

Cut the sides of the bread and keep aside.
Put the curd in a muslin cloth and hung it till all the water is drained out and you get the chana out of it.
Chop the green chilli, carrot, cucumber, onion finely.
Cut the tomato from four sides and chop them finely.  Do not use the seed portion.
Chop the pineapple slices too.
Mix the chopped green chilli, carrot, cucumber, onion, tomato, salt and keep aside for some time.  After sometime, you can see the water oozed out from this.  Remove the excess water.
In a mixing bowl, add the chana, mustard powder, salt, sugar and olive oil and beat well.  Then add the drained vegetables, coriander leaves and mix well.  The filling is ready to put in the bread now.

Take out two slices of bread.  Apply some filling on one side of the bread and cover it with the other. Cut in triangle or vertically as you wish.  Repeat the process for the  remaining bread and serve with sauce or chutney.
