Mango ginger pickle, thokku, manga inchi urugai, manga inchi thokku


Mango ginger pickle is made with mango ginger or ambe halad (white) or manga inji it is called.  Basically, we chop the same and add to the lime and green chilli with salt and make the pickle.  we can also add chilli powder and make it.  Le us see how to make this

Ingredients:

100 gm mango ginger grated
2 tbsp chilli powder
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
3-4 tbsp oil
asafoetida
salt as per taste
little turmeric powder
2 tbsp tamarind pulp (optional)
few curry leaves

Method:

Heat oil  in a kadai.
add the mustard seeds, fenugreek seeds,  asafoetida, curry leaves. when it is done,
add the mango ginger and saute till soft.  If you are adding tamarind pulp,add the same after sauteing the ginger for a while.
add turmeric powder, chilli powder, salt and mix well and saute for another two minutes.
switch off gas.
cool it and store it in a glass container in fridge.

Variation:  You can use this for making mango ginger rice.  mango-ginger-rice-manga-inji-sadam.html  You can omit fenugreek seeds for rice.  But if you like it, then no issues.    Tamarind pulp is absolutely optional.
