Sabudana chivda is made with nylon sabudana and not with the regular sabudana which we buy for making khichadi. I always used to wonder how it is made and i tried with the regular one and could not succeed. Actually, I was not aware of the variety of nylon sabudana. Yesterday when i went to buy paneer, i saw the packet of sabudana chivda on the rack. I just enquired with the shop keeper how it is made, he said it is made with nylon sabudana. I could not resist myself and asked him to give me 250 gms of nylon sabudana.
Then afterwards, do not ask me what happened. Here is the recipe for you.
Ingredients:
1/2 cup nylon sabdudana
1/4 cup peanuts
1/4 cup jada poha (thick rice flakes)
2 tbp dalia (chutney dal)
few curry leaves
oil for deep frying.
As per taste
salt,chilli powder, chaat masala, black pepper powder
Method:
1) Dry roast the sabudana and keep aside
2) slightly dry roast the dalia and keep aisde
3) dry roast the jada poha, keep aside
4) heat oil in kadai, fry the peanuts and keep aside.
5) fry the sabudana little by little ( i fried one table spoon at a time) till puffed up and drain it on a paper towel to remove the excess oil.
6) fry the curry leaves too
7) when everything is fried mix the peanuts, rice flakes, dalia, masalas, curry leaves and toss well
Store it in airtight container.
Variation: you can add thinly fried potato sticks and little bit sugar too.
