RAVA PAN CAKE l RAVA ADAI l SEMOLINA/SUJI ADAI

Adai is a breakast item made in South Indian House hold.  This is made with Rice and lentils with red and green chilli.  Today I made the same with Rava/Semolina/Suji and came out very tasty.

Since we can add vegetable of your choice in this like cabbage, carrot, capiscum, methi leaves, Muringa leaves etc. in this, it is quite healthy too.

MOONGDAL PARUPPU URUNDAI KUZHAMBU

Paruppu Urundai Kuzhambu is a version of Sambhar but instead of vegetables, dal balls, i.e. paruppu urundai is used.  It is a very tasty dish goes with plain  hot  rice with loads of ghee in it.  I love this combination along with some appalam or beans poriyal.  

It is very easy to prepare and is a delicious curry.  Do try and enjoy.

DOSA STUFFED WITH KUTCHI DABELI MASALA

We all are familiar with Masala dosa, Mysore Masala dosa.  Here is dosa stuffed with kutchi dabeli masala.


You are fond of dabeli right. If left over masala is there, do not worry what to do.  You can fill it on top of the dosa and enjoy it. Believe me, it was awesome.



Dabeli is a street food which can be enjoyed at any time. The basic masala ingredient is potato.  The chutneys makes it more tastier.

LEFT OVER LIME RIND PICKLE

This pickle with the left over rind is good to make the simple pickle.   Every day, you must be using one or two lime in your house.  What you have to do is after removing the juice, do not throw the rind.  Chop them finely.  Put them in a glass jar and add some salt in it.   Rest of the details, read the recipe below:

Pickles are part of Indian Cuisine.  Without pickle, the food is  incomplete.  Here is a pickle made out of the left over lime rind which we normally throw out or use to put in aluminium cooker to prevent it becoming black or use it for cleaning the brass vessels.

In Indian household, the lime is part of most of the cuisine as well as used for nimbu pani specially in summer.  Some people make the concentrated lime juice and store in fridge and whenever required, add water and drink it with salt and sugar.

Lime are good source of potassium, vitamin A, B, C and D, Calcium and Magnesium.  It rejuvenates the skin, improves digestion, fights infections, helps with weight loss, lowers blood sugar, reduces heart disease, prevents cancer,reduces inflammation etc.

A dash of lime juice in hot water in the morning helps in reducing the weight.

LEFT OVER RICE THALIPEETH

Very often, you are confused what to do with the left over rice.  Finally, you end up making the curd rice, phodni bhath, lime rice, coconut rice etc. with it.

Here is an easy and tasty thalipeeth recipe with the left over rice.  I made it with two main ingredients i.e. the left over rice and suji.

HEALTHY PAPAYA SALAD IN CUCUMBER BOAT

Raw papaya is equally good as the ripe one for health.  It is delicious and loaded with nutrients, antioxidant effects, anti cancer properties, fights inflammation, improve digestion and protects against skin damage.

It is good for diabetic patients.The juice of the leaf is also good for those who are suffering from dengue it is believed. It also helps in curing arthirtis, menstural disorders, improving immunity etc.  

Papaya is rich in antioxidant, nutrients such as carotenes, flavonoids and vitamin C as well Vitamin B. PEPPER CUMIN IDLI

Pepper Cumin Idli is easy to make if you have idli batter at home for a change.  You can either serve it along with sambhar and chutney or rasam. I preferred to have it with rasam of course, it is the choice of individuals.

It is not similar to kanjeevaram idli since  more ingredients are added in kanjeevaram idli than the pepper cumin idli.

Preparation for the same is like the normal idli batter.  Just before preparing the idli, add the crushed cumin, pepper, hing powder,ginger powder and curry leaves  and then make the idlis.

Vegetable pulao is a  one pot meal you can relish with any kind of raita, papad and pickle.  It is a delicious dish any time you can enjoy for lunch or dinner.

KOTHMIR PARATHA, CORIANDER LEAVES PARATHA

Like any other parathas, coriander leaves paratha is also very tasty and healthy.  When the same is available in abundance, I always make use of the same for making parathas otherwise also I make it.  It is a simple preparation with the masalas you want to add to the wheat flour.

I never make the stuffed parathas as my children won't like it.   It is always mixed with the flour and the paratha is made at home.

TAKALA SUBZI, CASSIA TORA SUBZI

I always search for new items to be cooked during the seasons.  One such dish is Takala subzi i.e. cassisa tora subzi. This is grown during the rainy season as a weed. In Kerala, we used to pluck the yellow flowers of this plant for making the Pookalam i.e. flower rangoli during Onam festival.  But I never had the idea that the leaves are edible and used for curing various kind of diseases.

Cassia tora is known as Takara in Malayalam and Takala in Marathi.This plant has many uses.  The plant and seeds are edible. Young leaves can be cooked as a vegetable while the seeds are a good substitute for coffee.

It is used as a natural pesticide in organic farms and its powder is most commonly used in the pet food industry.

Cassia tora tea is a herbal, pure, natural and non-polluted green health beverage. In the Republic of Korea, it is believed to rejuvenate human vision.  it has been used for treating skin diseases such as leprosy, ringworm, itching and psoriasis and also for snakebites. Other medicinal provisions from plant parts include balm for  arthritis  using leaves of Cassia tora.

After going through the net, I found the various usages of this plant.  Futher, my colleague also brought the subzi of this. Though she made it in a typical way, I used my additions to it.

KHAMAN DHOKLA (INSTANT) ll HOW TO MAKE KHAMAN DHOKLA ll RASAVINSUVAI

Khaman dhokla is basically made with gram flour.  A sweet , tangy super soft fluffy dish can be enjoyed at any time of the day with mint and sweet chutney. Gujarat's   famous dish anytime you can relish.

There are various ways of preparing it with curd etc, here I am sharing my friend Rinku's method of preparing this lovely dish.

DATES POMEGRANATE PARATHA, KAJUR DALIMB PARATHA

This paratha is healhy and nutritious.Main ingredients are seedless kajur, pomegranate seeds for filling and wheat flour for the dough.

Hot paratha served with pickle, curd, chutney or sauce is well liked by all. When you are bored of making the regular parathas like aloo, carrot, mix vegetables, or any kind of vegetable parathas, you can opt for this paratha recipe which I am sharing with you all.

I had some pomegranate and kajur and was thinking what to make for the breakfast.  Then this idea came to my mind and tried it.It came out well and enjoyed with green chutney and sauce. 

Copper, magnesium, manganese, vitamin B6 (pyridoxine), niacin, pantothenic acid, and riboflavin are also present in dates and provide their own unique preventive and healing functions. Together, these cofactors help your body metabolize carbohydrates, protein, and fats.

Pomegranates have anti-oxidant, anti-viral and anti-tumor properties and are said to be a good source of vitamins, especially vitamin A, vitamin C, and vitamin E, as well as folic acid.

BONDA SOUP, URID BONDA IN LENTIL SOUP

Dear Friends,

I am happy to announce that this post is my 1000th post.  It is a great achievement for me as far as I am concerned.  I could not have been successful without your support, encouragement.

I sincerely thank each one of you and my family members on this occasion and the God who has created varieties of  vegetables, fruits and other items for making lovely dishes for human consumption and for sharing and caring.

Let me turn to the recipe now:

This recipe is of Karnataka State.  In Tamil Nadu and Kerala, we make Rasam Vada. The Bonda soup is somewhat similar to that but the soup is made out of three dals  viz. tur, moong and masoor.    This is quite healthy and delicious too. 

 The variation in the soup is in rasam we add tamarind  but in the soup, it is avoided.

The bonda or vada in the hot soup is really awesome.  You can make the Bonda Soup with the left over vada also.

LIME PICKLE, NIMBU KI ACHAR, NARANGA UPPLILITTATHU, NARANAGA URUGAI

Lime Pickle is very easy to make and can be served with paratha, any varieties of dal rice, pulao, curd rice etc.  We always make pickles and store it for years together as per the tradition and practice in each and every household.  Varieties of pickles are made during summer season.

This lemon pickle is very easy to make and can start consuming after three days.  You can either cut it into  very small  pieces or into eight pieces.  Always make fresh  in small quantities and finish it off.  If you are in for the traditionally way of making it, then can make it and store it for years together.

MOR KALI OR MORE KUZHU

Mor kali   or Mor Kuzhu is an authentic traditional,yester years recipe which is almost a forgotten dish.  I thought of reviving the memory of this traditional recipe. Those who have tasted this will definitely love to make this. The younger generation who have not got the opportunity to taste this dish must try as it is very easy to make and quite healthy dish. I am giving here my mother's  method minus the coconut bits as my husband does not like coconut in it and my mother in law prepare without coconut.

It is prepared with the rice batter which is kept overnight for fermenting for the tangy taste. Another method is very easy with rice flour and butter milk.   By adopting this  method, you can make it within 10-15 minutes and serve. If you have unexpected guests at home, this recipe is handy provided you have curd and rice flour at home.

 You do not need any side dish for this and can be taken as it is. If required, you can have any pickle specially with vadu manga water.  This is a very healthy dish which will  satisfy your hunger cravings immediately. 

This can be prepared  when you have mid-morning or mid-afternoon cravings in between meals.  I am giving two methods here with Rice batter and Rice flour and curd.

UNDE KADUBU, PUNDI GATTI


My exploration of  Karnataka recipes is on.  Today I prepared the Unde Kadubu or known as Pundi Gatti. Normally, Tamilians and Malayalees  also prepare this rice dumplings either by grinding the rice (boiled rice)  or with the rice rava or idli rava.  The traditional pundi gatti is prepared by soaking and grinding the boiled rice.   However, this preparation   is a typical  Malnad style breakfast recipe and popular by name unde or unde kadubu or undlige. This is a plain version of unde kadubu prepared using rice and coconut.   We can also prepare Sweet and spicy version  according to your requirement which is known as Vella Kozhukkattai and Ulundu Kozhukkattai in Tamil version.  

This  is an easy, healthy and tasty breakfast  as the same is steamed and steamed foods are good for health.  It can be served with hot sambar or rasam or any kind of chutney.  I served it with an instant  rasam which is very  quick  and easy to prepare.  The recipe is given below.

DAHI PHULKI, GRAM FLOUR VADA IN YOGHURT


Dahi phulki is somewhat similar to the dahi vada but here it is prepared with besan i.e. gram flour/chickpea flour. The taste is entirely different as the main ingredient varies in it.   This dish is prepared during Ramadan and Eid.  

Since Ramadan is on 26th June 2017 i.e.  tomorrow, I thought of sharing this recipe with you all. so that you can relish this dish.   These vadas can be served with some chuntey and sauce too.

Preparation is very easy and can be served with or without chilling.  Here I am presenting the original method, but variations  can be adopted according to ones choice. Mustard oil is used, I used the normal cooking oil.

MADDUR VADA, MADDUR VADE

Maddur vade is a savory fritter type snack from South India.  This snack derived its name from the town of Maddur which is in Mandya district of Karnataka.  Maddur lies between the cities of Bangalore and Mysore. This vada is sold on trains that traverse these two cities. 

It is made out of rice flour, semolina and maida flour which are mixed with sliced onion, curry leaves, grated coconut and asafoetida. The onion and curry leaves are fried in a little amount of oil and then mixed with water to make a soft dough.

A small amount of dough is taken and made into a patty and then deep fried in oil until it turns golden brown to make the vada.

I happened to taste this vada when I went to Mysore from Bangalore in train. The vada tasted awesome and can pair with coconut chutney or sambhar.

If someone visits you unexpectedly, this recipe is handy for you to serve it along with coffee/tea.

AVAL ADAI, POHA ADAI, BEATENRICE ADAI

Poha or beaten rice adai is  very easy to make.  If you have time, then you can soak  the dal for an hour or you can soak it in hot water for 30 minutes. then soaking poha is easy as it does not take much time. 

You can make this adai bit spicy and should be served hot with chutney or sambhar.  It is an alternate method of the normal rice adai which we make at home.

An easy and tasty breakfast. You can also add veggies like grated carrot, beetroot etc. in it for making it more healthy.

MYSORE BONDA(using maida)

I tasted this Mysore  Bonda two years back when I went for  my nephew's wedding at Bangalore.  We were  staying in an apartment and my daughter was very  hungry.Though we were new to that place, myself and my daughter ventured out and saw  a snack counter nearby.  

When asked what is there to eat, the shop keeper said mysore bonda and tea/coffee is available.  When we saw him serving the hot bonda  and coffee/tea, we decided to order  that only.

To my surprise, it was awesome as I never tasted the maida version of bonda as I was familiar  with only Ulundu bonda.

This is a Karnataka special snack item which is paired with coconut chutney. For a change, you can indulge in such items  as now a days most people avoid usage of maida. This items should be prepared bit spicy then only we can really enjoy the taste of it.

KURMURA DOSA, MAMRA DOSA

Hot dosa with chutney and sambhar who will not like it?  there are varieties of dosas which are mouth watering.  Here is a simple and easy dosa with the mamra.  I have used the bhel kurmura to make this dosa.

The idea came from my husband as the packet of kurmura was there for sometime and it  became very soft.  Ofcourse, if you put in oven, or in hot kadai, you can make it crispy, but he said why don't you try making dosa with it.  I also said, nice idea, let me try it out so that I can get a new recipe for my blog.

It is very simple and easy to make this dosa and must have some spicy chutney or sambhar to serve along with it.  It takes around 4 to 5 minutes to make one dosa but that waiting period to cook is really worth it.

KADALA PARUPPU CHUTNEY, BENGAL GRAM CHUTNEY, CHANA DAL CHUTNEY

Kadala paruppu or bengal gram chutney is my favourite.  Always, the child hood memory flashes when I make this chutney.  One of my classmates, periamma i.e.  aunty  used to make this chutney along with phulkas on those days way back in 70's when I was a student,  I am talking about.  She used to cook the food  in the kummatty i.e. coal based stove.  The taste of that chutney and phulkas she used to give to us during those days,  I still remember.  However, today, I served it along with the dosa.

I prefer this chutney rather than the normal coconut chutney we make,  I am sure, you will also like this.

VEGETABLE PIDI KOZHUKKATTAI

Pidi kozhukkattai or upma kozhukkatai is made out of rice rava.  I have already posted the upma kozhukkattai.  Other varieties are : idli-rava-bhagar-dal-kozhukkattai.html,  millet,  bread,  tinai, kappa, lapsi

Today, I made a twist to this dish by adding vegetables in it and served along with uppu mangai chutney.  

This is a tasty and healthy breakfast as it is cooked by steaming and not much oil is involved in it.
The rice rava can be made at home or you can use the idli rava.  While using the idli rava, we have to use less water than the normal rice rava.

MOONG DAL CHUTNEY POWDER

When you are bored of eating the same stuff for a long time, a change is always better.  Here is a chutney powder with moongdal instead of the thogayal form.  

As I was having only a quarter cup  of moongdal left in the bottle, and want something spicy along with the dal rice, I tried this chutney powder and was liked by me colleagues too for lunch.

It is a simple preparation within a short span of time provided you have the items with you.

CHENAI PORICHA KUZHAMBU

I started my blog on 5th May 2013 and completed 4 years.  I wanted to post this recipe yesterday, but could not do so.

thanks to all for the support and guidance during my four years journey of rasavinsuvai.blogspot.in.  without your support, it would not have been possible for me to continue  this journey. and this is my 988th post.


Chenai means yam, elephant foot, suran it is known as.  We  make mezhuku puratti with chenai, chenai varuval,  kaalan, cutlet etc with this vegetable.  My favourite poricha kuzhambu is with brinjal and karamani means red chowli.  My mother always makes this for me whenever I visit her after my marriage.  I love to eat this with plain rice and vadu mangai.  Though the combination for me is papad and thoran varieties.

This poricha kuzhambu is a liquid curry like sambhar but the masala ingredients is different from sambhar.  My mother's version I am presenting here.

Some people add little bit of black pepper but my mother skip this.  Sometimes, I add, sometimes do not.  Adding pepper will give you a bit different flavour and taste.  Choice is yours.

BARELY UPMA


Barley or Jau it is known as is a healthy grain we must include in our diet.  If we have some urinary problems/fever etc. first thing in the mind comes to boil some barley seeds in water and drink the same through out the day.  This helps in passing the urine without any difficulty as well as the toxin is removed from the body.

Normally, after boiling the same in water, it is thrown out.  I tried to make upma with the barley seeds and came out very tasty with some vegetables in it.

Though many people may not like it, we still can include the same once in a while in our diet.

DUBKA

Dubka is prepared with moongdal.  The moong dal is soaked and ground to a coarse paste and with tomato and onion puree with masalas, it is cooked and served with steamed rice or phulka.

This recipe is from Kumaon region of Uttarakhand which is very popular.  It is a nutritious dish but very simple.  It is a powerhouse of proteins, easy to prepare  within a short period of time and tasty too .  This is a winter dish and had usually during the winter, otherwise also you can relish this dish once in a while during other seasons.   You can serve it along with any side dish.

While I made this recipe, I remembered the Maharashtrian style kulith  pitla  though slight variation in the method of preparation and masalas, the pitla is also a good dish along with steamed rice and phulka.

METHI LEAVES MOR KUZHAMBU

Mor kuzhambu is an easy kuzhambu variety prepared in the South Indian Household.   You can make the same with vegetables or with some vathals too.  We make it with sundaka vathal,  manathakali or any dried vegetables which is available at home.

If you have no vegetables left in your fridge, this is kuzhambu is very handy provided you have coconut and curd at home.

I had some left over methi leaves in the fridge which was not sufficient enough to  make subzi.  So I thought of making the mor kuzhambu with it along with rice.

Very easy to make and tasty along with hot rice and papad.

CASHEW FRUIT JUICE


Cashew fruit juice is made out of the cashew apple or cashew fruit it is known as it  is a delicious drink.  But let me tell you one thing that it may not be liked by all as it has got an astringent taste in it and you have to develop the taste for it.

The preparation is very simple and the same has to be served very chilled.  In order to remove the astringent taste, either you can steam boil or boil it with bit salt in the water.  It contains vitamin C.  The fleshy fruit is eaten as it is,  again you should develop the taste else you will feel bit itching in the throat and some are allergic to it.

Since the same may not be consumed by my family members, I made the juice only with one fruit which I could serve for two.

CASHEW FRUIT SAMBHAR

Cashew fruit is fleshy and sweet  when it is fully ripe.  It has got an astringent taste in it hence most of the people do not like to eat it  fresh as some might have an itchy feeling in the throat.  Normally, most of the time, it is thrown out after removing the nut from it.

It is found in Kerala, Maharashtra and Goa during the month of March / April.  I had prepared the mor kuzhambu with it and has already posted the recipe.

Now I am sharing with you all the sambhar recipe made out of it.  It goes well with the rice, chapati, phulka, dosa, pidi kozhukkattai etc.  I have given some brief about the fruit in the  morkuzhambu which you must read before preparing the dish.

 Cashew apples and cashew nuts are excellent sources of nutrition. The cashew apple contains five times more vitamin C than an orange and contains more calcium, iron and vitamin B1 than other fruit such as citrus, avocados and bananas.
