DAHI PHULKI, GRAM FLOUR VADA IN YOGHURT


Dahi phulki is somewhat similar to the dahi vada but here it is prepared with besan i.e. gram flour/chickpea flour. The taste is entirely different as the main ingredient varies in it.   This dish is prepared during Ramadan and Eid.  

Since Ramadan is on 26th June 2017 i.e.  tomorrow, I thought of sharing this recipe with you all. so that you can relish this dish.   These vadas can be served with some chuntey and sauce too.

Preparation is very easy and can be served with or without chilling.  Here I am presenting the original method, but variations  can be adopted according to ones choice. Mustard oil is used, I used the normal cooking oil.

Serves: 2

Ingredients:



½ cup
Besan, gramflour, chickpea flour
1/4cup
Water
As required
Salt
Pinch of
Soda
Deep frying
Oil
½ to 3/4 cup
curd


CHUTNEY

Bunch
Coriander leaves
2
Green chilli
2
cloves

Tempering:

1tsp
oil
½ tsp
Cumin seeds

Hot water with little salt to soak the vadas.



Other items:  Variation: you can add  chopped onion, green chilli and coriander leaves in the batter along with ¼ tsp rice flour.


You can serve it with sweet chutney, garnish with red chilli powder, chaat masala and cumin powder.

Method:

Step 1

In a mixing bowl, put the gram flour,salt,soda and mix well.   Add water little by little to make a batter which is not thick and not thin.  You should be able to pinch out small balls from it.  Keep aside.

 

Step 2

Put the coriander leaves, green chilli and garlic in the mixer and grind to a smooth paste. Beat Curd well and add  the chutney in it.  Add salt  as  required.



Step 3

Heat oil in  kadai. check the oil is  hot, put little batter in the oil if  it rises immediately, the  oil is hot.  Put small balls in it and fry till golden brown.

 

 

Boil water with little salt in it and put the vadas in it.keep it for 30 seconds and remove.  

 


Put them in the curd mix.  





Garnish with tempered cumin seeds, coriander leaves.



How to serve:

Serve cold or hotas you wish. 

Note:

1.  You can also sprinkle red chilli powder, black salt,cumin powder,chaat masala, sweet chutney etc.

2.  While making the batter,add chopped onion,cumin seeds, green chilli.In that case, reduce the chilli in the chutney.

3. you can add little bit of rice flour in the batter to get crispy vadas.
