HEALTHY PAPAYA SALAD IN CUCUMBER BOAT

Raw papaya is equally good as the ripe one for health.  It is delicious and loaded with nutrients, antioxidant effects, anti cancer properties, fights inflammation, improve digestion and protects against skin damage.

It is good for diabetic patients.The juice of the leaf is also good for those who are suffering from dengue it is believed. It also helps in curing arthirtis, menstural disorders, improving immunity etc.  

Papaya is rich in antioxidant, nutrients such as carotenes, flavonoids and vitamin C as well Vitamin B. Itis a good source of fiber and minerals such as magnesium.  THese nutrients help to improve cardiovascular health and protect against colon cancer. Other health benefits can be searched in google.

Since it is quite health friendly, you can have it as a fruit, smoothie, raw or can include in salad or subzis.



Let us look at the recipe now:



Preparation time:15 minutes serves: 2-3

Ingredients:

1/2 cup raw papaya grated
1/4 cup carrot grated
1 cucumber
2-3 tbsp pomegranate seeds
1/4 cup moong sprouts blanched in salt water.
2 tbsp chopped coriander leaves.
1 tsp lime juice
1/2 tsp sugar (optional)
black salt, black pepper powder, chaat masala as per requiement.


Method:

Step 1

Peel the cucumber.  with the help of spoon, scoop out the inner portion of the cucumber.  If the same is tender, you can use it in salad.  If seeds are big, throw them away.  You can see in the picture the boat I made and the scooped out inner portion.

Step 2

Mix all the ingredients in a bowl.  Add chaat masala,black salt, pepper powder, lime juice, sugar  and mix.

Step 3

Fill it in the boat.  Your papaya salad is ready.

How to serve:

serve chilled or as it is.  while serving you can cut into three pcs and serve.

NOTE: Blanching of moong  -  boil water with little salt.  put the moong sprouts in it and boil for one minute.  strain and keep aside.  the water can be used for making dal.

You can also add grated beetroot, a tsp of hung curd, crushed roasted peanuts etc. of your choice.
