BHINDI STIR FRY (LADY'S FINGER SUBZI)

 Bhindi is also known as  Okra, Lady's finger, Vendakkaya.  This ia a popular health food due to its high fiber, vitamin C and folate content.  Okra is also known for being high in antiodidants and goods source of calcium and potassium.

This has got a sticky nature when cooked.  To remove the stickiness, you can either put little cocum or rava or lime juice, vinegar etc.  

This vegetable has the capacity to reduce the blood sugar level if consumed daily. After cutting both the ends, put in water and keep overnight.  In the morning, in empty stomach, drink this water continuously for a month and see the difference in the sugar level.

Let us look at the recipe now:


 Preparation time:  10 minutes
cooking time: 10-15  minutes
serves : 2

Ingredients:

1/4 kg bhindi chopped
1 onion finely chopped
1 medium size tomato chopped (do not use the seed portion, cut the four side portion of tomato)
2-3 garlic pods
1/2 tsp cumin seeds
1 tsp mustard seeds
1/2 tsp chilli powder or dosa milagai podi (see the post of dosa milagai podi)  dosa-milagai-podi-gun-powder.html

few curry leaves
1 tsp oil
turmeric powder
asafoetida
salt as per taste.
1tbsp grated fresh coconut.


Method:

1.  Wash and wipe the bhindi with a kitchen towel

2.  cut both the ends and chop them finely

 

3.  chop the onion, garlic pods and tomato

4.  in a kadai heat the oil, add mustard seeds and cumin seeds

 
5.  when it splutters, add the onion, garlic, curry leaves and saute for two minutes.

 
6.  add the tomato and saute for another two minutes.
 


7.  add the bhindi, turmeric powder, chilli powder or dosa milagai podi,  asafoetida, salt and mix well.
 

8.  cover and cook the same for 5 minutes, do not forget to stir  in between.  after 5 minutes switch off gas and keep covered for another 5 minutes.
9.  remove from gas garnish with grated coconut and serve with chapati, rice.


NOTE: SPICE LEVEL ADJUST ACCORDING TO YOUR TASTE.

TIPS:

to remove the stickiness of bhindi, SPRINKLE A TEASPOON OF RAVA or lime juice or cocum or vinegar  IN THE SUBZI, THE BHINDI WILL NOT STICK TO EACH OTHER.
