PEANUT CURRY (VER KADALAI, NILAKADALA, KAPPALANDI)

Peanuts are rich in energy and contain health benefiting nutrients, minerals, antioxidants and vitamins that are essential for optimum health.  They compose sufficient levels of mono-unsaturated fatty acids especially oleic acid. It helps to lower LDL or "bad cholesterol" and increases HDL or "good cholesterol” level in the blood. Research studies suggest that Mediterranean diet, which is rich in monounsaturated fatty acids help to prevent coronary artery disease and strokes by favoring healthy blood lipid profile.These nuts are a good source of dietary protein compose fine quality amino acids that are essential for growth and development.

The curry made with tomato gravy is a tasty dish for serving along with roti, phulka, chapati etc.

Let us have a look at the recipe now:

Ingredients

Raw peanuts - 1 cup
onion chopped - 1 big
red ripe tomato chopped - 1 big  or alternatively you can use tomato paste - 2 tbsp
Dhania powder - 1 tsp
Pav bhaji masala  or garam masala or chana masala- 1 tsp (sometimes i mix up all the masalas little bit)
Turmeric powder - 1/4 tsp
1/4 tsp ginger garlic paste
1/2 tsp red chilli powder (according to your taste, increase it)
Salt - to taste
Oil - 2 tsp
cumin seeds - 1/4 tsp

Garnishing:

chopped coriander leaves

Method

1. Soak the peanuts overnight.  Cook them in pressure cooker with salt  till it is soft.
2.  make puree of tomato and onion separately.
3. In a kadai pour oil, when it becomes hot add the cumin seeds.
 4.When it splutters, add the onion and saute for 3-4 minutes till the raw smell goes.
5.  now add the ginger garlic paste, tomato puree and cook the same till you get a nice dry  paste out of it.  I mean the paste should not have raw smell.   or alternatively add tomato paste.
6. Add the dhania powder, turmeric powder, pav bhaji masala  or mix masala,  red chilli powder and saute for 2-3 minutes.
if you are adding  tomato paste, check the amount of red chilli powder as the paste contains red chilli powder.
7. Add the cooked peanuts. Add salt if required.
8. boil the same.  the consistency should be a thick gravy and not very watery.
9.  garnish with chopped coriander leaves.

how to serve:

serve hot with chapati, upma, rice, bread, pav  etc.
