TENDER COCONUT KULFI

The kulfis are very delicious and can be had at any time.  We love the kulfis and often go to the nearby shop for buying this.

During the summer, we had two to three cream of tender coconut.  I was not willing to throw the same but no one was ready to eat it.  During summer, every body is crazy about drinking some cold drinks, tender coconut water,  eating ice cream and kulfis and do not want to eat any food.  Hence I thought of making this kulfi and turned out to be very tasty.

Let us look at the recipe now:

Preparation time:  15 minutes
cooking time: 30 minutes
yield : 12-14 kulfis


Ingredients:

21/2 cup milk
3/4 cup milk made (or use reduced milk)
1/2 cup finely chopped tender coconut bits
sugar 3-4 tbsp
cardamom powder little
5-6 safron strands
2 tbsp corn flour
chopped dry fruits for garnishing.

Method:

1.  In a thick bottom vessel, heat the milk, add the condensed milk and boil.
2.  Add the sugar, cardamom powder, saffron and boil till the sugar is dissolved.
3.  Add the corn flour in little milk and mix it along with the boiling mixture.
4.  Keep stirring the mixture till thickening. the consistency should be able to pour the same in the kulfi mould.

 5.  When it becomes cold, add the chopped tender coconut bits and mix it.

6.  Pour the same into the kulfi mould and keep in the  refrigerator for freezing.



7.  When it is set, to remove the same, keep it under the running water for two minutes an demould the same.


How to serve:

serve garnished with chopped dry fruits on top of it.

Note;  if you are using reduced milk, pulse it in the mixer to make a smooth paste or if you prefer the bits of malai while eating kulfi, you can add as it is.
