BHINDI RAITA (LADY'S FINGER RAITA)

Lady's finger, okra, bhindi, vendakkai has many medicinal values.  Normally we make Vendakka Sambhar, Vendakka puli, Vendakka Pachadi etc.with this vegetable.

We can make stir fry subzi, stuffed bhindi, bhindi fry etc.  Today, I thought of trying the raita as raita varieties are liked by my children along with pulao, rice etc.

It is said that bhindi soaked in water overnight and the water consumed after removingthe bhindi  in the morning in empty stomach helps in controlling the diabetics.  coriander leaves juice taken in empty stomach also helps in controlling diabetics.    health-benefits-of-bhindi-okra-ladys.html

Let us look at the recipe now:


Prepartion time: less than 10 minutes
cooking time: 5 minutes
serves:2-3

Ingredients:

7-8 lady's finger
1/4 tsp chilli powder
less than 1/4 tsp black pepper powder
a pinch of asafoetida
lessthan 1/4 tsp turmeric powder
1 tsp  mustard seeds
1/4 tsp cumin seeds
2-3 broken red chilli pieces.
few curry leaves
salt as per taste
1/4 tsp sugar
1 tsp oil
1 cup curd.
chopped coriander leaves.


Method.

1.  cut both the ends of lady's finger, chop the same  and keep aside.

2.  Heat oil in a kadai, add mustard seeds, cumin seeds, curry leaves, broken red chilli pieces.
3.  When it splutters, add the asafoetida and okra, little salt, turmeric powder   in it and fry for 4-5  minutes till it becomes crispy a bit.

4.  In the meanwhile beat the curd, add the sugar and salt in it.

5.  Add the crispy okra in it.  Sprinkle the chilli powder, black pepper powder on top of it and garnish with chopped coriander leaves


How to serve:

serve with pulao, tomato rice, chapati.
