MANGO KADHI

Mango kadhi is made with the ripe mango and curd.  It  is a very easy, simple and instant preparation if you have mango pulp in your freezer.  If not also, it is not a big issue to make it as one mango is sufficient enough to make kadhi for two servings.

You need ripe mango for this and goes well with the rice.  If the consistency is bit saucy, then you can serve it with chapati and phulka too.


Let us look at the recipe now:

Preparation time:  10 minutes
cooking time: 5 minutes
serves: 2 - 3


Ingredients:

1 ripe mango peeled and chopped
1/2 cup  curd.
salt as per taste
1/4 tsp red chilli powder
1 tsp gram flour (besan)
2 green chilli
1 big piece of ginger
1/4 tsp sugar  or jaggery (optional)
a generous pinch of roasted cumin powder  (optional)
a generous pinch of black pepper powder (optional)


seasoning:

a pinch of asafoetida
1 tsp mustard seeds
1/4 tsp cumin seeds
2-3 broken red chilli pieces
curry leaves.

Method:

1.  Cook the chopped mangoes with one cup water for 5 minutes, allow to cool.
2.  In a mixer, add the green chilli and ginger piece grind to a fine paste.
3.  Add the cooked  mango, curd and pulse it to a smooth paste.
4.  If the consistency is thick, add little boiled water. add salt and mix well.
5.  In the besan, put little water and add this to the mango puree.
6.  Add the black pepper powder, cumin powder, chilli powder, jaggery and simmer for 2 minutes.
7.  Season with the ingredients mentioned.
8.  Mango Kadhi is ready to serve.


Alternatively

Make mango puree with green chilli.  Add the besan in little water. beat the curd and add the besan paste in it.  Mix the puree, curd ,  salt, cumin powder, black pepper powder, chilli powder,  sugar and bring to boil.  season with the items mentioned in it.  If the consistency is too thick, add water to make it little watery.

How to serve:

serve with rice.
