PUMPKIN SEED PARIPPU PODI

Pumpkin seeds are good for health.    Raw nuts and seeds, including pumpkin seeds are one of the best souces of plant based Omega 3s.  Pumpkin seed oil is rich in natural phytoestrogens and studies suggest it may lead to a significant increase in good HDL cholesterol along with  decreases  blood pressure,  hot flashes, headaches, joint pains and other menopausal symptoms in post menopausal women.

This is rich in healthyfats, antioxidants and fibers, may provide benefits for heart and liver health, particularly when mixed with flax seed.

I have made the pumpkin flaxseed gun powder and the link is here.  pumpkin-flaxseed-gun-powder-diet.html

Pumpkin seeds are roasted and eaten by us.  My mother used to give us this when we were small.  When I came to know about the health benefits of  pumpkin seeds, I thought of making the parippu podi out of it.

Parippu podi is mixed with rice along with ghee or sesame seed oil and served in Southern States.  We used to love this rice along with papad.   When you buy pumpkin, ensure that the same is fully ripe and we can make out whether we can make use of the seeds or not.

Let us look at the recipe now:

Preparation time: 10 minutes
Grinding time: 5 minutes
Yield :  above half  cup

Ingredients:

¼ cup dried  pumpkin seeds.
¼ cup tuvar dal
2-3 red chilli (adjust spice level according to your taste)
Salt
asafotida a generous pinch.

Method:

1.  Dry roast the pumpkin seeds and tuvar dal separately.
2.  I kept the pumpkin seeds in microwave for one minute  5 times.
3.  Tuvar dal and chilli  I roasted on kadai. Allow to cool.

4.  First grind the pumpkin seeds to a fine powder.
5.  Add the tuvar dal, chilli and grind to a fine powder.
6.  Add salt and pulse it for a minute.

Pumpkin tuvar dal parippu podi is ready.

How to serve:

Serve with hot plain rice with ghee or sesame seed oil.

I  sprinkled the powder while making the colacasia  dry subzi and it was awesome.

I also made pumpkin parippupodi rice today and it was fantastic.  Must use seasame seed oil for this preparation.  See the link
