PUMPKIN SUBZI (DIET FRIENDLY) NO ONION, GARLIC,MASALA


Pumpkin subzi, a diet friendly subzi   prepared without much masala  who cannot consume masalas, onion and garlic.  The reason for making this is  I was late from office and my family  members were very hungry.

Since I want to cook very fast, I prepared the same without wasting my time much indulging in preparing the masalas.

However, the subzi was quite tasty once in a while you can indulge in such recipes.






Preparation time: 5 minutes
cooking time: 10 minutes
serves 2-3

Ingredients:

250 gms red pumpkin
a small piece of ginger
turmeric powder
curry leaves
a small piece of broken red chilli
1 tsp mustard seed
1/2 tsp jeera
1 tsp oil
a pinch of asafoetida
a blueberry size jaggery (optional) diabetic can avoid this.
salt to taste

Method:

1.  Wash and cut the pumpkin into small cubes.
2.  Cut the ginger into juliens
3.  Heat oil in kadai, add the mustard seeds and cumin seeds, red chilli, asafoetida.
4.  When it is done, add curry leaves
5.  Add the pumpkin pieces, ginger juliens  and saute for 2 minutes
6.  Add 1/2 cup of water, turmeric powder, salt
7.  Cover and cook for 5 - 7  minutes.
     pumpkin subzi is ready to  serve.



How to serve:

serve hot with phulkas, chapati, rice.

Variation:  You can add papaya with pumpkin and make the subzi.
