THAKKALI DOSA II TOMATO OMLETTE

Thakkali Dosa or Tomato Omlette is made with gram flour.  If you have unexpected guests, you can make this instantly if you have the ingredients mentioned below at home.  Normally, everyone will have the basic ingredients suggested in this recipe, however, if you do not have, can skip that.

This can be served as Breakfast, Snack with sauce or green chutney.

Ingredients:

1 Cup gram flour/besan/kadala mavu

2 Medium size tomatoes

1 onion

1 Tbsp rice flour

Green chilli or past as per your requirement

Garam Masala as required

Pinch of Hing powder

Roasted cumin powder

Salt

Pinch of Turmeric Powder

Chopped coriander leaves.

Oil



Method:

Step 1
 
Chop the Tomatoes, Onion, Coriander finely.

Step 2

Mix the Gram flour, rice flour, dry masalas, salt.  Add one cup water and keep aside for 5 minutes.  Then mix well without any lumps.  Add chopped vegetables in it and mix.

Step 3

Heat tava grease with oil.  Spread laddleful of batter on the tava.  Let it cook,when the top side becomes dry,drizzle some oil.  Flip and cook other side also till brown spots appear on it.


How to serve:

Serve along with sauce or green chutney.

AMLYACHA KHARDA II AMLA CHUTNEY II GOOSEBERRY CHUTNEY (DIFFERENT METHOD)

Amla or  Avla or  Gooseberry or  Nellikka it is known as is available now and we make various kinds of pickle, thokku, put in salt water etc.  

I have made various dishes out of it. Apart from pickle, I made rasam out of it and was quite tasty and healthy too.

 It is a different kind of chutney which was shared by my friend Trupti from Bangalore.

Bitter gourd is good for health especially for those who are suffering from diabetes. Various dishes can be made with this. Today, I tried it with curd which was quite tasty with rice.

 I finely chop them and put in curd with little salt which is my husband's favourite.

SPICY WHEAT FLOUR BALLS II HOW TO MAKE SPICY WHEAT FLOUR BALLS.

Spicy wheat balls are made with wheat flour and some veggies. You can make without veggies also. Add some spices viz. chilli powder, bback pepper powder, green chilli, chopped coriander etc. to make it bit tasty as the wheat flour does not have a taste without these items except for chapati and puri. This is a wholesome meal as it has dal, wheat flour, veggies and spices and can be served for breakafast, lunch, snack or dinner.

Dhokla is a vegetarian food item that is found mainly in the Indian state of Gujarat and parts of adjacent states. It is made with a fermented batter derived from rice and split chickpeas. Dhokla can be eaten for breakfast, as a main course, as a side dish, or as a snack with  Green and Sweet Chutney.

I happened to taste the Raswala Khaman which I liked very much and tried at home.  The result is YUMMY.

PALAK NEER DOSA II NEER DOSA II SPINACH NEER DOSA

Neer dosa literally meaning water dosa in Kannada - Tulu language is a crêpe prepared from  rice batter.  Neer dosa is a delicacy from Tulu Nadu  region and part of Udupi - Mangalorean cuisine of Karnataka.  

It is a preparation of two basic ingredients viz. Rice and Salt but some people add bit of grated coconut also. There are many variations of preparing this dosa.  Today I tried it with Palak.  You can masala Neer Dosa, Carrot Neer dosa etc. 

There is no requirement for fermentation of the rice in order to prepare Neer dosa. The rice needs to be soaked for at least 2 hours. After a quick wash and a drain the rice needs to be ground by adding water in order to get very fine batter. Additional amount of water can be added based on the thickness of the batter and then salt is added for taste. Finally the batter is used to prepare the dosa. 

The Basic is the Normal Neerdosa preparation only but only palak is added to this for change in flavour.

Sandwich is a filling dish any time you can have.  Mumbai road side sandwiches are so yummy with the Green Chutney, Butter spread on it along with some sliced Cucumber, Onion, Tomato and Boiled Potatoes, Beetroot with the Sandwich Masala is mouth watering.  If you are a cheese lover, some Cheese on top of it is heavenly.

GRILLED MANGO CHUTNEY l CHUTTA MANGA CHUTNEY l MANGO CHUTNEY

During Mango Season, i.e. summer, you get lot of  Raw Mangoes.  We make pickle, Ada Mangai, Aam ka Panha, Use it for making Amchur Powder i.e. Dry Mango Powder etc. Another interesting recipe is Panha Thandai.

Here I prepared slightly different manner.  I grilled the same, removed the pulp.  Similarly, grill the Green chilli also.  If you wish you can use red chilli too but while grilling be careful.

BESAN CHEELA l BENGAL GRAM CREPE

Besan cheela is a North Indian Pan cake  made out of Besan ie. Bengal gram flour with some veggies and basic ingredients available at home and it is quite filling.  It is very easy, tasty and can be served for Breakfast and also as a Snack.  It is protein rich and with the added vegetables in it, you feel quite satisfied.

DHUSKA BATTER DHOKLA l HOW TO MAKE DHOKLA WITH DHUSKA BATTER

Dhuska (clik  on Dhuska for link) is a street food of Jharkand.  It is made out of Rice, Bengal Gram and Urid dal.  It has got some similarity with the Adai of South Indian Cuisine.

After preparing the Dhuska, I had some left over batter which I used for making the Dhokla.

PACHA KADU MANGA l TENDER RAW MANGO CHUTNEY

Pacha Kadu Manga l Tender Raw Mango Chutney is made with Tender Raw mangoes during the season and served with Mild Kootu, Molagootal and rice.  This is also served as a Pachadi during Sadhya. No cooking involved in this except the tempering.

It is like a raita you can say but it is slightly sour in taste.  In order to balance the sour taste of it, you can add more quantity of Coconut but I prefer the sour taste in it.

DHUSKA l BREAKFAST RECIPES l SNACKS


Dhooska or Dhuska or Dushka is a popular deep fried snack eaten all over Jharkhand. The main ingredients of the dhooska are Rice, Chana dal, Urid daland sometimes boiled potatoes are also added to this savoury dish.  Some add the Green Peas. The bread is then deep fried. It is often served with any sauce or chutney or Aloo Tamatar Ki Sabji.  Dhuska is a Jharkand Street Food recipe.  This dish has got little similarity with the South Indian Adai recipe.  Link is attached.  It is a tasty dish which can be served anytime, I feel.

I prepared the Dhuska today along with Aloo Tamatar ki Sabji and it was awesome.  You can deep fry them or if you want to avoid oily foods, you may shallow fry them also.  But while shallow frying, add little bit soda or eno so that it puffs up while preparing on the tava.

UPPU MANGA CHUTNEY l SALTY MANGO CHUTNEY

Uppu Managa means Salty Mangoes. The Tender Mangoes are put in Salt Water. Water is boiled with Salt, cooled and then the mangoes are put in. As days pass, the colour of mangoes will become change and they will become tender. We use this mango to serve with Kanji, Curd Rice and make Chutney. When it become very soft like we can mash it with our hands, that time it is made as Arachukalakki with Curd.

ACHARI UPMA, PICKLE FLAVOURED UPMA

Upma is a Breakfast item made in Southern States.  It is served along with sambhar, chutney or as it is.  In Maharashtra, it is called uppittu and served with thin sev, kanda and lime.  The texture is little semi solid form.  I love the combination of Upma and Choley.

This idea came to my mind because I used to eat it with any kind of pickle.  Since I had freshly made mango pickle, I thought I will add this to upma and make it.

KOTHIMBIR VADI

Kothimbir vadi is a Snack item made with gram flour and coriander leaves.  This is a Maharashtrian special dish which can be served steamed, shallow fried and deep fried.  All these methods tastes so good and any time you can have this.

Different people make it in a different way like some people add sesame seeds, some adds roasted peanuts.  Some don't add rice flour, some adds rava in case the besan is very smooth.  Normally, the Jada besan is used.

PAPAYA MOLAGOOTAL

Papya molagootal  is made with raw papaya, some lentils  and mixed in coconut gravy.  It is mild in taste and goes well with chapati and rice.  

The raw papaya  or green papaya has many nutritional benefits.  It is full of essential nutrients and enzymes to promote digestive health.   It also contains Vitamin C, E & A, folate.  Presence of antioxidants burns the calorie and extra fact deposits in the body.  We can make salads, juice, chutney, and can add in sambhar, and any other veg preparation too.

Apart from the above, leaves works as a cure for  menstrual pain. It cures diseases viz. indigestion, constipation, acid reflux, heart burn, irritable bowel syndrome, stomach ulcers and gastric problems too.  It controls the flow of blood to maintain proper blood pressure.  It protects heart diseases.

Recently, it is  said that the juice of leaves increase the platelets of the  dengue  patient which  is true in  my case.  

I love the chutney made out of this which the shop keepers give along with the khaman dhokla.  See the combination of the dish.  As the besan is likely to produce gas, the chutney served along with it balance the same.
