KOTHIMBIR VADI

Kothimbir vadi is a Snack item made with gram flour and coriander leaves.  This is a Maharashtrian special dish which can be served steamed, shallow fried and deep fried.  All these methods tastes so good and any time you can have this.

Different people make it in a different way like some people add sesame seeds, some adds roasted peanuts.  Some don't add rice flour, some adds rava in case the besan is very smooth.  Normally, the Jada besan is used.

Let us look at the recipe now:

 
Kothimbir vadi (steamed, shallow fried and deep fried)



Ingredients:

1 cup Besan
2 cups chopped coriander leaves
1/4 cup rice flour
1 tbsp 3G paste (Ginger, Garlic and Green chilli)
1/2 tsp red chilli powder
a pinch of asafoetida (normally not added)
1/4 tsp turmeric powder
1 tbsp sesame seeds or  2 tbsp  roasted peanut powder
1/4 tsp baking soda or 1/2 tsp eno (optional)
2 tsp hot oil (optional)
Salt as required.
Water

Method:

Step 1

Mix the besan, rice flour,  red chilli powder, hing, tumeric powder, salt in a bowl.  Add the chopped coriander leaves and mix well.

Step 2

To make the cylidrical form,  add less water and mix well make cylindrical shape apply little oil.  Grease the steamer and place the cylindrical vadi on top of it and steam cook for 15-20 minutes in medium flame or till it is done.

Step 3

If you are choosing the plate method, add water to get a pouring consistency.  Grease the plate and keep ready the steamer.  Add eno if you are using.  Pour immediately on to the plate, tap it and steam it for 15-20 minutes or till it is done.

Step 4

Cut it into desired shape and shallow fry, deep fry.  Cylindrical method, cut them into slices and shallow fry or deep fry.

How to serve.

Serve hot with green chutney or sauce.
