Gun Powder or Milagai Podi is mixed with ghee or oil and served with Idli/Dosa. This powder I also use it in making dry subzis.
Normally, the Gun Powder is made with Urid dal/Red chilli/Sesame seeds/Asafoetida/Salt/Curry leaves/Coriander seeds. Some people also add Bengal Gram (Chana dal).
Here I have used Bengal Gram, Urid dal, Moong dal, Masoor dal, Tuvar Dal, White Sesame Seed, Asafoetida, Red chilli. You can also use Kulith (Horsegram), Black Pepper, Peanut etc.
Let us look at the recipe now:
Ingredients:
Urid dal - 2 tbsp
Bengal gram - 2 tbsp
Split Pigeon Peal Dal l Tuvar dal - 2 tbsp
Masoor dal - 2 tbsp
Moongdal - 2 tbsp
White Sesame seeds - 1 tbsp
Coriander seeds - 1 tbsp
Red chilli - 5-6
Oil - 2tsp
Asafoetida - 1/2 tsp
Salt - 1 tsp
Curry leaves - 2 sprigs
Method:
Step 1
Dry roast the Sesame seed separately and keep aside. Dry roast the curry leaves, keep aside.
Step 2
Put 1/2 tsp oil fry the Bengal gram when it is done half, add the Tuvar Dal and fry till nice aroma comes and the dal is brown in colour. Do not burn.
Step 3
Roast the Masoor dal. Now roast the Moongdal. Put drop of oil and fry Urid dal. Transfer into plate. Now roast the Coriander seeds. Just warm it till it is crisp. Put the asafoetida and remove within few seconds.
Step 4
Put little oil and put 5-6 red chilli in it and fry for few seconds and switch off gas. It will become crispy due to the heat in the kadai.
Step 5
Grind the red chilli and then add all the dals. Coarsely grind it. Add the sesame seeds and 1 tsp salt. Pulse it for few seconds. Multigrain Gun Powder is ready.
How to serve:
Mix with oil or ghee and serve it with Idli/Dosa.
