MAHARASHTRIAN STYLE UPIT l SUJI UPMA l SEMOLINA UPMA l RAVA UPMA

Upit means Upma.  We call it upma and Maharashtrians call it as Upit.  This Upit is slightly different from the Upma which we make because this version I tasted when I went to Kolhapur for a wedding.  Kolhapur means the dishes are very spicy and we eat very less spice.  The hot hot Upit they served garnished with Nylon sev and coriander on top with a dash of lime juice was very tasty but was too spicy for us and we had to opt for lot of sugar in it.  But I still enjoyed.  The only difference I noticed is that we add asafoetida in Upma but in Upit it is not.

Serves: 2

Let us look at the recipe now:

Ingredients:

Semolina/Suji/Rava - 1/2 cup
Carrots/beans/green peas - 1/2 cup
Onion chopped - 1 small one
Tomato - 1/4 tomato
Salt
Ghee - 2 tsp
Water 1-1/2 cup to  2
Lime Juice -  1/2 lemon
Green chilli - 1 -2 chopped or according to spice requirement.

Tempering:

2 tsp Oil
1 tsp Mustard seeds
1 tsp Cumin seeds
Few curry leaves

Garnishing:

Coriander leaves/Roasted peanuts/Grated coconut/ Nylon Sev/ Lime juice

Method:

Step 1

Heat ghee in kadai.  Roast the rava in it till it changes colour, keep aside.  Heat the water in another vessel and ready.

Step 2

In the same Kadai, add oil.  When it becomes hot, put the mustard seeds and cumin seeds.  When it crackles, add the green chilli, curry leaves. Saute for few seconds.  Add the onion, saute till translucent.  Add tomato and saute for a minute.  Then add the vegetables.  Saute for few minutes.  Add the hot water, salt and bring to boil.

Step 3

When the water starts boiling, add the rava without forming lumps, cover and cook till the water is evaporated.  In between check and mix well.

How to serve:

Serve hot garnished with the  Nylon sev, dash of lime and coriander leaves.(of your choice)
