AVIAL l MIXED VEGETABLE IN COCONUT GRAVY

Avial is a  South Indian dish  of mixed vegetable gravy combined with coconut paste and curd.  Best way to include as much as vegetables you can since now a days children are reluctant to eat most of the vegetables if it is prepared individually.  It is quite tasty to serve with Rice, Adai, Chapati etc.








Let us look at the recipe now:

Time taken: 1 hour
Serves: 3-4

Ingredients:

Ash gourd - 200 gms
Red pumpkin - 100 gms
Snake Gourd - a small pc about 2"
Carrot - 1 small
Drumstick - 1 or half as you wish
Beans - 5-6
Cluster beans 5-6
Yam -  a small piece
Sweet potato - small pc or potato one small (optional)
 Brinjal -1 small (optional)
Raw Banana - 1
Few curry leaves.

For the Paste:

Coconut - 1/2 grated
Green chilli 2-3 (spice according to your taste, you can add)
Cumin seeds - 1/2 to 1 tsp

Other item:

1/2 Cup Fresh Curd ( some people use sour curd or a piece of tamarind or a piece of mango for the tangy taste)

2 tsp Coconut oil.

Method:

Step 1

Wash all the vegetables and cut into 1" length thin pieces.  Heat one cup water and put the vegetables which take long time to cook i.e. Drumstick, Yam, Raw banana, Beans.  When it is half cooked, add other vegetables, Salt and Turmeric.  If you are using Brinjal put it when other vegetables are done 3/4 as it get cooked fast.  We don't want a mushy avial.

Step 2

Grind the Coconut, Green Chilli, Cumin Seeds.  Add little water and grind to a smooth paste.

Step 3

Whisk the Curd and keep aside.

Step 4

When the vegetables are cooked, add the ground Coconut paste, bring to boil.  Add the curd, mix well and switch off gas.  Add 2 tsp of Coconut oil,  Curry leaves, mix well, cover and keep.

How to serve:

Serve along with Plain rice, Chapati, Adai etc.
