METHI SPROUTS KHEER

Methi sprouts kheer, really? something weird? No I don't feel so because we eat methi ladoo which is quite good for health. So why not Kheer that also with methi sprouts?

Yes, I tried this today and liked it very much.  Methi has got many medicinal values and we can consume this in any form.  Do try you will really love it.

Let us look at the recipe now:








Ingredients:

Methi sprouts - 2 tsp
Lapsi cooked - 2 tsp
Thick coconut milk 1/4 cup
Thin coconut milk - 1/4 cup
Jaggery - 3 tbsp
Pinch of elaichi powder, sunth powder, salt
Cashew/Badam - 3 nos each
Ghee 1 tsp
Soaked subja -1 tsp
Fresh cream for garnishing (optional)

Method:

Step 1

Grate coconut, extract first milk with 1/4 cup water and second milk again with 1/4 cup water. keep aside.

Step 2

Melt the jaggery, remove impurities, if any, keep aside.  Crush the badam, cashew.

Step 3

Heat kadai, add the ghee and fry the cashew and badam.  In the same ghee, add the sprouts and saute for few minutes.  Add the lapsi and the second milk and bring to boil.  Add the jaggery, sunth powder, elaichi powder and bring to boil.  Add 2 tbsp water.  Add the badam cashew crushed.  Keep little for garnishing.  bring to boil. Switch off gas.  Add the first coconut milk, remaining cashew badam, subja.  Garnish with fresh cream if you wish.

How to serve:

Serve hot or cold as you wish.
