Dhokla is a vegetarian food item that is found mainly in the
Indian state of Gujarat and parts of adjacent states. It is made with a
fermented batter derived from rice and split chickpeas. Dhokla can be
eaten for breakfast, as a main course, as a side dish, or as a snack with Green and Sweet Chutney.
I happened to taste the Raswala Khaman which I liked very much and tried at home. The result is YUMMY.
Ingredients for the RASA
1 Tbsp Chana Dal
1 Tbsp Tuvar dal
1 Tbsp Urid dal
Little Fenugreek seeds
1/4 Tsp Cumin seeds
4 Cloves OR powder a generous pinch
Little Cinnamon Powder
1/4 Tsp Black Pepper Powder
SALAD:
Chopped Cucumber / Onion / Tomato / Cabbage / Chaat masala
Your Rasa and Dhokla is ready for plating.

Turmeric Powder
1/4 Tsp Red Chilli powder
1/2 Tsp salt or as required
Lemon Juice
Garnishing:
Coriander leaves / Nylon sev
1-2 Tbsp oil
1/2 - 1 Tsp Mustard seeds
1/2 - 1 Tsp Cumin seeds
Few Curry Leaves
1 - 2 Green chilli chopped
Generous pinch of asafoetida
Turmeric Powder
1/4 Tsp Red Chilli powder
1/2 Tsp salt or as required
Lemon Juice
Garnishing:
Coriander leaves / Nylon sev
Chopped Cucumber / Onion / Tomato / Cabbage / Chaat masala
Method:
Step 1
Dry roast the Chana Dal, Tuvar dal, Urid dal, Fenugreek seeds, Cumin seeds and Cloves. Cool and add the powdered ingredients along with it and grind to a smooth powder.
Step 2
Put 2 Tbsp of powder in a bowl , add little water to make a smooth paste. Then add 1 and half cup water. Add salt and turmeric powder, red chilli powder. Heat oil add mustard seeds and cumin seeds, Curry leaves, asafoetida, green chilli. Add the water and cook till the gravy thickens and switch off. Add lime juice, mix well and garnish with coriander leaves.
Step 3
How to serve:
Mix the salad with chaat masala. In a plate, crumble the dhokla.Put some Rasa, salad and garnish with coriander leaves and nylon sev. Serve hot.
