BRINJI RICE l RICE RECIPES l BAY LEAVES RICE

Brinji Means Bay leaves.  In Tamil it is known as Brinji.  This Rice recipe is like any other vegetable rice recipes only we add more Brinji leaves in it.  

I have added vegetables in it you can make it with meal maker ie. Soya Chunks.  Soak the Soya chunks in hot water, cool it, wash it with cold water, squeeze and then add to the rice while cooking.

It is a tasty rice variety can be served with any kind of Raita, Papapd and Pickles.

Let us look at the recipe now:

Time taken: 1 hour
Serves : 2 -3

Ingredients:

Rice - 1 Cup ( I took Surti Kolam, if you wish you can use Basmati rice)
Onion - 1 finely sliced
Tomato - 1 cut into lengthwise
Green chilli - 1
Ginger Garlic Paste - 1/2 tsp
Cashews - 5-6

Whole Masala

Saunf, Fennel Seeds - 1/4 tsp
Black Cardamom - 3-4
Dalchini -1 small piece
Cloves - 3 -4
Bay leaves - 3-4

Masala powder:

Coriander Powder- 1/2 tsp
Garam Masala Powder - 1/2 tsp
Red Chilli Powder - 1/4 tsp to 1/2 tsp
Tumeric Powder - 1/4 tsp

Others: 

Pudina leaves -8-10
Coriander leaves - 2 tbsp
Ghee / oil - 2-3 tsp /1 tsp
Salt  as required ( 1  to 1 1/2 tsp)

Vegetables:

Beans/Carrot/Cauliflower florets/Baby Corn/Ivy Gourd etc. Paneer cubes if you wish.
Carrot beans, Ivy gourd  cut into 1" pc.

Method:

Step 1

Wash and soak the rice for half an hour in two cups of water.

Step 2

Heat cooker.  Put 2 tsp ghee and 1 tsp oil.  Add the Whole masala in it.  Saute for few seconds and add the Cashews and saute.  Add Ginger garlic paste Green Chilli and the Onion.  Saute till  Onion is translucent.  Add the Tomatoes and saute for a minute.  Now add the vegetables and saute the same.  Add tsp of salt.  Add Pudina leaves, Coriander leaves.  Add the Masala Powders.  Saute the vegetables for 2-3 minutes.  Add the rice and the water.  Add one more tsp of ghee.  Bring the same into boil, cover and cook for 2 whistles in high flame and simmer it for 5 minutes.  If the third whistle comes before 5 minutes, switch off gas.

Step 3

Open it when cools down.  Add the Paneer cubes mix well and close it.  If you want you can fry the paneer and put it.

How to serve:

Serve hot with Papad,Raita and Pickle.
