BHAINGAN BHARTA



Bhaingan bhartha is made out of the purple colour big brinjal (egg plant) by roasting the same on the gas stove.  In the beginning I never used to like this dish as it had a peculiar smell.  But during our visit to Delhi, in one of our friend's house,we had this dish along with roti for lunch.  I could not make out  that it was bhaingan bharta.  It was made so tasty, even my husband who never used to like brinjal started eating this stuff.  After coming from Delhi, it used to be one dish compulsorily in our house every week.

Now let us look at the recipe now:

Ingredients

Big brinjal - 1 no (purple colour)
Oil - 3 tbsp
Green chilli (chopped) - 1 tsp
Chilli powder - 1 tsp
Ginger garlic paste - 1 tsp
Onion (chopped) - 1 large
Turmeric powder - ¼ tsp
Tomato (chopped) - 3 medium sized or 2 big ones
Cumin seeds - ½ tsp
Asafoeitida - a pinch


garnishing:

chopped coriander leaves


Note:  Spice level may be adjusted according to your requirement.
Method

1. Apply oil on the brinjal, slit the same in the middle from both the sides so that it gets cooked from inside too. directly roast it on the gas stove.  cool it.  
2. Remove the skin  of the brinjal. . 
3. Cut the same check to ensure that there are no worms in it. Chop the same keep aside.
4. Heat oil in a kadai,  add cumin seeds. 
5. When it crackles, add onion, green chilli and saute for 2 minutes. 
6. Then add ginger garlic paste and saute for a minute. Add the tomatoes and saute till tomatoes becomes soft.
7. Then add the chopped  egg plant,turmeric powder, chilli powder, asafoeitida, salt and sauté for 5 minutes or till it is done. 
8. Serve hot with chappati, bread garnished with chopped coriander leaves.
