COCONUT COOLER

Tender coconut is a natural refreshing drink worldwide.  It  contains sugar, vitamins, minerals, electrolyte, enzymes, amino acids etc.  It hydrates the body hence it is given to the patients those who are dehydrated. It also contains the B Complex vitamins viz. riboflavin, niacin, thiamin and folates etc.

Though it is a natural refreshing drink, I thought of making it slightly in a different way by using the cream also.  Normally, most of the people after drinking the water, throw the cream of it.  It can be used for making subzi or eat as it is or used for tender coconut payasam or milk shake,  tender coconut kheer,  tender coconut kulfiAloeVeraTenderCoconutMethiSproutsSabzi  etc.

  Let us look at the recipe now:

Ingredients:

1 large glass of tender coconut water
cream of tender coconut chopped
a pinch of dry ginger powder or can use fresh ginger a small piece
a pinch of roasted cumin powder
a generous pinch of black salt
1 - 2 tsp sugar (optional)
3-4 pudina leaves
1 tsp chopped coriander  leaves

Method:

Break the tender coconut and remove the water in a glass jar.
take out the cream from the coconut,remove the brown part (skin) and chop them finely and refrigerate it.
In a blender add the coconut water, ginger, black salt, cumin powder, 2-3 pudina leaves, coriander leaves and blend well. Pour this in the coconut cream and serve chilled or use ice cubes to serve immediately.  If you wish you can strain it or serve as it is.
