MAKAI PALAK, SWEET CORN PALAK, SPINACH CORN SUBZI

Makai palak is a very tasty dish with hot roti, parantha, rice.  I love to eat with rice any kind of palak preparation.  The combination of sweet corn and palak makes this wonderful and will be liked by everyone as I have made it less spicy.  If you wish, can add more spices according to your requirement.  Palak has abundance of Vitamin K, A, magnesium, iron, calcium, Vitam K, A, C, B2, B6, C.  It is also a great source of protein, phosphorus, vitamin E, zin, dietary fiber and copper and omega 3 fatty acids.  It is less in calories, fat free and cholesterol free.  Also available in abundance.

Ingredients:

1/2 cup sweet corn boiled
1 big  bunch  of palak leaves puree
2 onion chopped
1/2 tsp kasuri methi  powder (roasted )  *
1/2 tsp garam masala
1/4 tsp chilli powder
1/4 tsp haldi powder
1/4 tsp amchur powder
1/4 tsp cumin seeds
3 G paste (ginger garlic  green chilli paste)
1/4 cup curd
2 tsp oil
salt



Method:

wash the palak leaves.  boil water in vessel and put the leaves in it. keep for a minute, remove in a strainer and run through cold water or under the running tap water.  squeeze the excess water, puree it in a mixer.
Heat oil in Kadai.
add cumin seeds,
when it crackles, add chopped onion,
saute for some time and add 3 G paste
add the sweet corn and saute
add palak puree,
add amchur powder, chilli powder, haldi powder, saute, add salt,
beat the curd and add to the palak
mix well.  add water to adjust the consistency, if you want it little watery
add the roasted, powdered kasuri methi, garam masala  mix well and switch off gas.
serve hot with roti, phulka, chapati, rice as you wish.



* dry roast the kasuri methi in kadai, powder it with your hand, sieve through.
