NOMBU UPPU ADAI NOMBU ADAI (SAVOURY)


Karadaiyan Nombu is a traditional fasting festival observed by tamil brahmins. The married women pray for the well being and long life of their husband. It is celebrated during the transition of tamil months Maasi and Panguni. 


A sweet adai or vella adai is made for the neivedyam.  It is made out of rice flour and jaggery and steamed like idli.  It  is called the karadaiyan nombu adai.   Sweet adai, vella adai 

It can be made in savory too which can be served as evening snacks on normal days.  All the festival items are we make only during festivals and on normal days, we feel lazy to make it.  But certain items can be prepared for breakfast or for evening snacks.  This savory version I make it frequently like we make the uppu kozhukkatai which we make for Ganesh Festival.

Let us look at the recipe now:




Ingredients


Rice flour - 1 cup
Water - 1.5 cup
Salt - as per taste
Grated coconut - 1/2 cup
Boiled red chowli (karamani)
oil 1 tsp

Tempering:

1 tsp oil
1 tsp mustard seeds
1 green chilli chopped
few curry leaves.
a pinch of asafoetida

Method:

1. In a kadhai pour water, add rice flour and mix well and ensure that no lumps are  formed.  or you can boil the water and then add the rice flour and stir simultaneously to avoid forming lumps.  
2.  Roast the karamani or cow pea slightly till the colour changes.
3.  wash and pressure cook them ensure that it is not mushy.
4. Add the other cooked karamani, grated coconut, oil in the rice batter. 

5.  add salt and mix well.  
6.  temper with the ingredients mentioned above and mix that too in the batter.
7.  cook them till you get a mass which leaves the sides of kadhai.
8.  cover and keep for 5 minutes.
9.  after 5 minutes, remove the lid, knead them well by applying little oil in your hand.  the dough be little cold so that you can handle them.
10, make small balls out of it, flatten them on a piece of plaintain leaf or a plastic sheet and make a hole in the center.
11.  place plantain leaves or grease the idli mould and place the flattend adai on it and steam cook them for 10-15 minutes.  
12.  open the lid, allow to cool and remove the adai with a spoon.
13.  serve them with  home made white butter.

.Serve hot or cold as you  wish. You should be careful with water since some rice powder absorbs more than 1 1/2 cup and some only one cup.
