TOMATO PUREE

I wanted to post this recipe when I made Beetroot, tomato saar.  But somehow could not make it.  Tomato puree can be made and kept in freezer.   Either you keep it in container or make cubes by putting them in ice tray and keep in ziplock bags.  One hour before making any dish, remove it from freezer to bring to room temperature.  I always used to keep tomato paste, tomato puree, ginger, garlic, and green chilli paste in fridge for a week as it is quite handy for me to make the dishes in the morning rush hour.

Let us look at the recipe now:

Ingredients:

1 kg tomatoes
1 tsp sugar
1 tsp salt

Method:

Wash and cut the head part of the tomatoes.
Boil water and put the tomatoes in it. Water level should be sufficient enough to cover the tomatoes.
close the vessel with lid and boil for 5 minutes. switch off gas
remove the tomatoes and run through cold water.
peel off the skin.
put them in blender with salt and sugar and make puree out of it. pass through sieve if you wish or can keep as it is. ( I make it without sugar and salt).
keep it in airtight container.  use as and when required.

Put them in ice tray

make cubes of it

put them in zip lock bag and keep in freezer

This is quite handy for working women and bachelors cooking.
