BEETROOT TOMATO SOUP


Beetroot tomato soup is made up of beetroot and tomato.  This soup is quite different from the normal soup we make as I wanted to make something and landed up in making the soup in a different way.  You can serve this hot or cold as you wish.

Now summer  has started, you can serve this cold.

Let us look at the recipe now:




Ingredients:

2 beetroots
5 big ripe tomatoes or 3 cups tomato puree ( i used tomato puree)
3 tbsp rasam powder
1 cup thick coconut milk
salt to taste
2 tbsp coriander leaves chopped
1 tsp garlic paste

Method:

Wash and pressure cook the beetroots for one whistle, allow to cool.
peel the skin, cut the same and put it in blender and make puree out of it.
remove the heads of the tomatoes.
Boil water, put the tomatoes in it (if you are using tomatoes), cover and boil for 5 minutes.
switch off gas, take out the tomatoes and run through cold water.
peel off the skin.  put it in blender and make puree out of it. ( Tomato puree  If you wish, can strain the seeds.
Now mix the tomato puree, beetroot puree, rasam powder, salt, garlic paste and bring to a boil.
switch off gas and add the coconut milk.
garnish with coriander leaves, serve hot or cold as you wish.
