Pooran poli is a sweet bread made out of wheat flour, maida for outer cover with the stuffing of chana dal and jaggery. It is basically a Maharashtrian dish and mostly are prepared during festivals especially for HOLI which is on 17th of March this year.
I love this dish and one of my colleague always used to bring this for me after the festival. This can be served any time. You can make the puran ahead and keep it in fridge. whenever you want to make the poli, only have to prepare the dough.
Let us look at the recipe now:
Ingredients:
for the stuffing/puran
1 cup chana dal
1 cup jaggery ( you can put 3/4 cup jaggery and 1/4 cup sugar also)
a pinch of nutmeg powder , jaifal powder
1/4 tsp cardamom powder
lessthan 1/4 tsp salt (normally it is not put, but I use it)
a generous pinch of dry ginger powder (optional) (not used normally)
for the dough:
1 cup wheat flour
1/4 cup maida
1/4 cup fine rava
1/4 tsp turmeric powder
2 -3 tsp oil
salt to taste little
Method:
Preparation of puran:
1. wash and soak chana dal in enough water for 5-6 hours.
2. cook the same in kadai till it is soft. to check, take out one dal and press it between your fingers, it should break easily. or you can pressure cook the same with one cup of water for 3-4 whistles.
3. drain the excess water, cool and put it in mixer and make powder of it.
4. Add little water in jaggery, melt it, remove the impurities and put back in kadai.
5. add the chana dal powder, less than 1/4 tsp salt in it and cook the same till it starts leaving the sides of the kadai.
6. add the cardamom powder, ginger powder, jaifal powder and mix well and allow to cool, keep aside.
Preparation of dough:
Soak the rava in water for about 1 1/2 hour.
1. Put maida, whole wheat flour, soaked rava in a kadai, add salt, oil and mix well.
2. add water little by little and make the dough like you knead the chapati dough.
3. while preparing the dough for puran poli, it should be little loose and soft and not like the chapati dough.
4. cover it with a damp cloth or plate and keep it for one hour.
Now coming to the final stage of preparation of poli
After one hour, take the dough add one tsp oil and knead again. Pinch out small balls of dough and keep aside. make small balls of puran and keep aside. this will help you to prepare the poli very easily. take out one dough ball and roll it out like you make the normal chapati or puri. place one puran ball in it. gather the puri from all sides to cover the puran and take out the excess dough from it. cover it well and make ball of it so that the puran will not come out the covered area when you roll it with the rolling pin. after making the ball gently press it with your palm to spread it, dust with wheat flour and gently roll out the poli. heat the non stick tava, put it and cook the same till brown and black spots appear on the poli. When it is done, apply ghee and serve hot.
Note:
1) You can also store it without applying ghee in it. just cook and keep it covered when it becomes cool. while serving, heat it on tava, apply ghee or butter and serve hot.
2) You can reverse the proportion of maida and wheat flour to 1 cup maida and 1/4 cup wheat flour also.
