SHEER KURMA (SEVAI KHEER)

Sheer kurma is made with vermicelli i.e. semiya, milk, sugar and dry fruits and dates.  Today is Ramadan, Ramzan and it is the special dish today made in every household.  It is a delicious kheer one can enjoy any time. This has got the similary to sevai kheer  or semiya payasam.  in semiya payasam, we do not add dates.  we can add kishmish also in both but my daughter does not like it hence I have not added the same.



Let us have a look at the recipe.

Ingredients:

1/4 cup roasted vermicelli (fine ones)
3 cups milk,
1/4 cup sugar
2 dates
a pinch of saffron
a generous pinch of cardamom powder
2 tbsp ghee

Dry frutis and nuts

2 dates
5-6 cashewnuts
5-6 badam
5-6 pistachio
1 tbsp charoli


Method:

Blanch the pistachio and badam in hot water. remove the skin and sliver it and keep aside.
in a kadai heat one tbsp ghee and fry the badam, pista,keep aside.
fry the cashew, keep aside
fry the charoli and keep aside all the above together.
chop the dates and soak it in 1/4 cup milk with saffron

in the same kadai, add the remaining ghee and add the sevai and saute for a minute.
now add the 2  3/4  cup  milk, sugar and boil for 10 minutes.
add half of the fried nuts, soaked dates and boil for another 5 minutes.
remove from the gas and add the remaining roasted fry fruits, cardamom powder.
serve hot or chilled as you wish.

Variation:

You can add sugarfree instead of sugar.  In this case after boiling everything, add sugarfree at the time of adding the remaining dry fruits.
