KULITH RASAM, MUTHIRA RASAM, HORSEGRAM RASAM, KOLLU RASAM

Rasam is a watery dish served after having sambar rice in Southern States.  It is a good appetiser too.  Various types of rasams are made viz. tomato rasam, mysore rasam, milagu rasam etc.  recently one of my cousin visited our house.  she is also equally interested in cooking like me so she shared the recipe.


Rasam is one of the  dish we really enjoy. myself and my elder brother is very fond of it.  my mami used to make goddu rasam or kottu rasam.  we love to eat rice with this rasam and nothing else is required.


muthira rasam, kulith rasam, horsegram rasam






Ingredients:

2 tbsp kulith
1/4 ts rasam powder
1/4 tsp ginger paste
1/4 tsp garlic paste
1/4 tsp crushed black pepper and cumin seeds
1 small tomato
turmeric powder
1/2tsp dry mango powder - amchur powder or 1 tsp lime juice or( tamarind pulp 2 tsp)
salt

Tempering:

1 tsp ghee
1 tsp mustard seeds
less than 1/4 tsp cumin seeds
a pinch of asafoetida
curry leaves

Method:

slightly roast the kulith and soak it in water overnight.
pressure cook the same with 1 cup water.
drain the water and keep aside.
boil water and put the tomato in it and cover it for 10 minutes.
take out the tomato, peel the skin and chop them finely.
Grind the kulith with ginger paste, garlic paste, tomato and bring to a boil till the raw smell  goes off of ginger and garlic.  add the water kept aside, salt, turmeric powder  amchur powder and adjust consistency of water.  Simmer till it froths switch off gas.

Take a kadai, add the ghee when it becomes hot add the mustard seeds, cumin seeds, asafoetida, curry leaves and add to the rasam.  serve hot with rice or can be served as an appetiser.   Believe me, i could not resist myself from drinking this hot rasam  before having my food.
