Guava Cheese, Amrud cheese, Perakka cheese, Koyapazham cheese

Guavas are rich in fibre, vitamin A,B, C & E.  The vitamin C content is more in Guava than oranges.  It helps in regulating high blood pressure, cholesterol and good for diabetic people also. The leaves are boiled in water and strained and consumed for cough and cold.







Guavas are available plenty now and i am a big fan of this fruit.  I like to eat this raw and during my pregnancy, my colleagues used to bring it for me wherever and whenever they found the same.  In Mumbai, we get them with little bit of salt and chilliy powder mixed and filled in it, vow yummy it is.

Coming to the recipe - Guava cheese is   chewy, fudge like sweet, made out of fresh Guavas, delicacy of Goa.This is made during the Christmas festival.  One of my colleague used to bring  sweets after Christmas along with this.  Till such time I tasted it, i was not aware of making this dish out of Guava  though I have made Kheer/Payasam out of it.


Let us look at the recipe now.

Ingredients:

3/4  cup guava pulp
1/2 cup sugar
1/2 tsp ghee

Method:

Grease a plate with ghee and keep aside.
to remove the pulp, cut the guava into four pieces, remove the seed portion out it and keep aside.
chop the guavas finely and put it in mixer.
smash the seed portion well with your hand, add little water and strain it through a strainer to extract the pulp stuck to the seeds.  (it is really a painful effort so i just left it.  You should get nice guavas which are having less seeds then you can go through this process)
Grind the guavas to a smooth paste.  (The actual proportion is if you are having 4 cups of pulp, put 3 cups of sugar)
Put the pulp in a non stick kadai, add the sugar and mix well.  Cook the same in low flame till it starts leaving the sides of the kadai.  End of the process, it will be difficult for you to stir it.  Transfer the same to the greased plate and level it with a greased spoon.  When it is warm cut into diamond shape.  Normally the same are cut very small piece in size.



Do try and  enjoy this delicious sweet dish. Soon coming out with guava kheer/payasam.
