RICE PUTTU l VEGTABLE PUTTU l KERALA CUISINE l HOW TO MAKE PUTTU l BREAKFAST RECIPES

Today I made Puttu and vegetable Puttu for breakfast as my brother was at home.  My children and husband do not like this item so for making it only for me, i do not take much trouble.  Since my brother likes it, I thought I am getting a chance to eat this.
Puttu  is one of Kerala’s traditional breakfast item that is usually served with Banana, pappadam, sugar or Kadala curry (Black Chana Curry).    This dish is one of the favorite breakfast in Kerala which is also very easy to make. We get ready made puttu powder in almost all malayali/tamil stores.  We can make this in the idli vessel, coconut shell etc.  The champa rice puttu podi (puttu flour ) is very tasty in fact.  It is a simple and easy to make dish.

Puttu is steamed in a vessel specially designed for this, consisting  of one bottom vessel for filling water, one cylindrical shape top portion, a perforated plate and a cover with hole in it to escape the steam while cooking.  This vessel can be purchased from any malayali stores or you get the same in Matunga.  If you happen to visit Kerala, you can pick one from there.
Here I am giving you the recipe of vegetable puttu as well as the normal puttu.  The normal puttu is made with the rice powder and grated fresh coconut and served hot with Kadala curry, pazham (banana) sugar, Papad etc.  The vegetable version can be eaten as it is or with coconut chutney, sambar or with any curry of your choice.

serves: 3
Ingredients:
1 cup puttu powder (I used Nirapara Puttu Powder)
1 cup grated fresh coconut
1/2 cup water.
Salt as required
Little ghee or oil for greasing inside the  top portion of the vessel.
For Vegetable Version:
1 medium size carrot grated
handful of sweet corn
4-5 french beans finely chopped.

1/4 tsp pepper powder
1 tsp ghee
Method:
NORMAL PUTTU
In a flat vessel, put  1 cup Puttu powder.  Add sufficient salt and  mix well. Add half cup water slowly into this and mix well.  When you add water, there are chances of forming lumps in it.  What you have to do is with both the hands, rub it to remove the lumps.  Half cup water is sufficient to wet  the rice powder.    One should be careful while adding water as it should not become a dough.  When you take and press the powder  in your hand it should be binding at the same time when you break it, Should be in a powdered form.  Keep the same aside for 10 minutes.
Now grease the  puttu vessel from inside as well as the perforated plate.  Add two glass of water in the bottom vessel and boil the water.  In the meantime, keep the perforated plate in the top vessel ensure that it is fitted properly.  Now add a layer of coconut in it and add around 4-5 tablespoon of Puttu powder which is ready with you.  Add another layer of coconut and again add one more layer of Puttu powder and top it with one layer of coconut.  Place this on top of the bottom vessel. cover it with the lid and steam the same for 10-15 minutes.  after it is cooked remove it from the bottom vessel and keep for two minutes and then just push the perforated plate with a laddle after removing the lid to take out the cooked  Puttu from the vessel.  You can directly  transfer it in  the serving plate.    
I had some Choley ready with me so I did not take the pain of making the Black Chana curry today.

For Vegetable Method:
Chop the beans finely. Cook the beans and corns with little water and salt.  In a kadai add one tablespoon of ghee, add 1/4 tsp cumin seeds when it splutters, Add the boiled corns and beans saute for a second, add the grated carrots, add 1/4 tsp pepper powder, check for the salt,if need be add, mix well  and remove from the stove.
You have added a layer of coconut in the normal Puttu.  above that add  2-3 tablespoon of mixed vegetables, then Puttu powder again coconut, vegetables and steam it.
serve hot with any kind of curry, papad, sugar, banana.  To be frank with you, it tastes awesome with Kadala curry, papad, banana and sugar.  Soon posting Kadala curry recipe :kadala-curry-black-chickpeas-curry.html



How to make rice flour at home:  

Wash the rice properly and soak for 2 hours.  
Drain the water and dry the rice on a cloth.
when it is dried, grind the same in mixer to get a  coarse powder.
Now roast this coarse rice powder  on low flame for 4-5 minutes (mixing continuously) or till it slips off the ladle. Spread this powder on a plate and allow to cool.
whenever you want to make puttu, you can use this.
