METHI PUMPKIN PURI

Everyday, to make a different breakfast for my children is a difficult task for me. mummy please donot make this, do not make that, do not want to eat idli, dosa. Was thinking what to make.  Saw little bit of methi and a piece of pumpkin in the fridge.  so tried with these two ingredients and the outcome was a lovely dish.

Methi  pumpkin  puri can be made for breakfast, lunch, snx, dinner anytime with a cup of tea you will not refuse. chopped methi with boiled pumpkin and masala, a lovely dish, make it and enjoy.



Let us look at the recipe now:



Preparation time: 10 minutes
cooking time: 30 minutes
serves: 1

Ingredients:

1/4 cup boiled red pumpkin
1/4 cup chopped methi leaves
3/4 cup wheat flour
2-3 garlic cloves
a small piece of ginger
less than 1/4 tsp ajwain
1/2 tsp chilli powder
a generous pinch of hing powder
a generous pinch of turmeric powder
salt
oil for frying

Method:

Smash the pumpkin till you get a nice pulp
make ginger and garlic paste and keep aside
Mix the pumpkin, chopped methi leaves, wheat flour, ginger garlic paste, salt, chilli powder, ajwain, hing powder, turmeric powder and make a stiff dough like you make for the normal puri.
divide equally the balls ( i made around eight balls) and roll them out
deep fry in oil
serve hot with a cup of tea, sauce or with batata baji.
