ROTI UPMA (BEST OUT OF WASTE)


ROTI UPMA

I made this roti upma with left over rotis.  I had 4 rotis with me and children do not want to eat next day.  What to do cannot waste it.  Hence, the idea of making upma came into my mind like bread upma. Once doctor told me to have left over chapatti and subzi in the morning which is quite healthy.  We can make this upma with or without vegetable.  Let us have a look at the ingredients the way I made it.



Ingredients:

4 rotis
1 green chilli chopped
2 tbsp roasted peanuts
2 onions chopped
Few curry leaves
2 tbsp grated coconut
A pinch of asafetida
1 tsp oil
1 tsp mustard seeds
1tsp urid dal
1tsp chana dal

Chopped coriander leaves for garnishing

Method:

Tare the roti into 5-6 pieces and put in mixer and pulse for one minute till you get small bits of them.
Not to powder it.
Heat oil in kadai, add mustard seeds, urid dal, chana dal, asafetida, curry leaves.
When it splutters, add the green chilli and onions and sauté for 2-3 minutes.
Add little salt while sautéing the onion to have a speedy process.
Add the ground roti in it mix well. Check the salt and add if required as we are adding salt in chapatti.
Add the peanuts, grated coconut and mix well.
Cover it and switch off the gas. Let it remain covered for 5 minutes. Garnish with coriander leaves and serve hot with sauce o chutney. 


Variation:  you can add crunchy vegetables like green peas, carrots, cabbage, capsicum etc.

Heat oil add the above vegetables cut into long strips and sauté in high flame for 1 minute and add to the upma.
