LEMON PICKLE (SWEET VERSION), meethe achar, meethe lonche, sweet pickle,

I have already posted the recipe of lemon pickle and the benefits of lemon.  Here  I am presenting a sweet version of pickle made with lemon.  This recipe was shared with me by one of my colleague Mrs. Ranjana Narkar.  When she brought the same in the office during lunch hours, you will not believe, I  could not resist myself and had a lot with roti and dal rice.

 It is a simple and easy recipe and can be made instantly and served.

Let us look at the recipe now:

Ingredients:

25 nos lemon
1 1/4 kgs of sugar

k pra lime pickle masala 100 gms
8 tsp salt

OR

25 nos lemon
3/4 cup to 1cup chilli powder (depending upon your spice level adjust)
1 1/4 kg sugar
1 tsp asafoetida
8 tsp salt
1 1/2 tsp  roasted methi seeds powder (fenugreek seeds)


Method:

1.  Cut the lemon into 8 pcs, remove seeds.
2.  Mix all the ingredients and grind to a fine paste in the mixer.
3.  Store in airtight container. do not use wet spoon.

1 used one tsp vinegar also.

How to serve:

this sweet  lemon pickle can be had with roti, curd rice, dal rice.
