MUSK MELON ICE CREAM

Ice cream is favourite of every ones especially in summer.  After the mango ice cream, I prepared the musk melon (cantaloupe) ice cream which was liked by my daughter very much.  The ripe musk melon has its own sweetness and it is delicious, cooling.  Here is the simple recipe for you to relish this ice cream during this summer.






Ingredients:

1 cup musk melon pulp
1 cup milk
1 cup milk powder
1/2 cup sugar
1 tsp corn flour
1/2 cup fresh cream (i used amul fresh cream)

roasted nuts viz. almonds, pisatchios

Method:

In a vessel, boil milk with sugar and reduce the volume to 1/4th atleast.  This is done to reduce the contents of water in it which causes crystalisation.   In little milk, mix the corn flour and add to the milk when it is reduced 1/4th and mix well till it thickens.  allow to cool.  In the meantime, whisk the fresh cream till peak forms.    Now mix the milk powder, milk ad freeze it for 3-4 hours till it forms semi solid.  take out from the fridge and blend it in mixer.  Now add the  melon pulp, fresh cream and the nuts and mix well.  put it in an airtight container and freeze it.  serve when it is ready.

Tips:  If you wish, can add little orange colour to with the  corn flour, I prefer the natural colour,hence did not use it.
