KOSUMALLI, KOTHAMBARI


Sri Ram Navami is falling on 8th of this month.  During this day, Neer moru, panagam and the kosumali, kothambari or carrot cucumber salad with moongdal is prepared and served as prasadam.  This salad is also  the speciality during feasts.  It is a simple salad preparation and very tasty to eat as it is.

Let us look at the recipe now:

Ingredients;

Moongdal - 1/4 cup
carrot - 1 no
cucumber - 1 no
salt as required

Tempering:

Oil - 1/2 tsp
asafoetida - a pinch
green chilli - 1 no (chopped)

Other ingredients for garnishing and mixing.

coconut grated - optional - 1 tbsp
Lemon juice - 1 tbsp
coriander leaves  - 1 tbsp

 Method:

Wash and soak the moongdal for half an hour.  Boil water and put the moongdal in it and wait for 2-3 minutes.  remove it, drain it and keep aside.
grate the carrot and cucumber separately.  squeeze out the water from the cucumber this water can be used for making cucumber cooler.
Mix all the ingredients, salt, lemon juice.  temper with the ingredients mentioned above. garnish with coriander leaves, grated coconut and serve.
