KODUKAPULI PICKLE, MANILA TAMARIND PICKLE, SWEET TAMARIND PICKLE

Here I am with another recipe of Kodukapuli.  This is the season of pickles and people make varieties of pickles in the summer season.   Though sweet tamarind has got a bland taste, with tamarind pulp, chilli powder and jaggery, this pickle tastes awesome.

Let us look at the recipe now:

Ingredients:

1 cup sweet tamarind
1/4 cup tamarind pulp
1 tsp (heaped) chilli powder
a generous pinch of asafoetida
1 tsp mustard seeds
1/4 tsp fenugreek seeds
1/4 tsp turmeric powder
2-3 curry leaves broken
1/2 tsp salt
a small piece of jaggery
3 tbsp  tsp oil


Method:

Heat oil in kadai.  add the mustard seeds and fenugreek seeds.
add asafoetida, curry leaves.
add the tamarind pulp, salt
add the sweet tamarind
cook till it is soft
add a piece of jaggery, cook till the raw taste of tamarind goes off.
switch off gas
add the chilli powder and turmeric powder
mix well and keep it to cool. serve with curd rice, dal rice
