INSTANT GOOSEBERRY PICKLE, AMLA PICKLE, NELLIKKA PICKLE

Pickles are always relished by us  especially it is part of Indian Meals.  Pickles are made by using various methods in different regions and every pickle has got its speciality.  Red chili powder, rai dana, saunf etc. are part of the pickles.

Here I have taken amla today for making the pickle.  I have used the instant method to make this pickle so that as soon as you make it, you can consume.  But the real taste in pickle is when you store it for a longer period.




Let us look at the recipe now:

Ingredients:

1/4 kg amla (gooseberry, nellikka)
2  tsp salt
2 tbsp chilli powder
1/4 tsp  haldi powder
1/4 cup oil

Seasoning:

1 tsp mustard seeds
1/2 fenugreek seeds
pinch of asafoetida
curry leaves

Method:

Wash and pat dry the amla.  Cut it into small pieces.
Heat oil in kadai.  add the mustard seeds, fenugreek seeds, asafoetida, curry leaves.
when it is done, add the chopped amla in it and saute for few minutes.
add the haldi powder, salt and saute for another couple of minutes.
switch off gas.  add the chilli powder, mix well and allow to cool.
store it in glass bottles or bharani.
this pickle can be used immediately.


Note:  You can also steam cook the amla.  when you press with your fingers, it opens and can remove the seeds. then mix the masalas and season with the items mentioned above in the oil.  but will have to wait for 2-3 days.
