THALIPEETH

Thalipeeth is a dish prepared  out of various flours made by Maharashtrians.  In South Indian style, you can say, Adai/dosa/uttappa.  The flours mixed with onion, coriander leaves and masalas prepared by pressing with the fingers and cooked on tava, served hot  with sauce, chutney or yoghurt.  It is quite filling, tasty and healthy too.  If you have some unexpected guests, this dish is quite handy provided if you have the flours in stock.

Let us look at the recipe now:

Ingredients:

4 tbsp wheat flour
2 tbsp jwari flour
2 tbsp bhajni flour
2 tbsp besan
2 tbsp rice flour
1/2 tsp chilli powder
1/4 tsp garam masala powder
1/4 tsp ginger paste
1 green chilli chopped
1 big onion finely chopped
a pinch of turmeric powder
a pinch of asafoeitida
chopped coriander leaves
2-3 tbs white sesame seeds
a pinch of ajwain
salt as required
oil for cooking

Method:

In a mixing bowl put all the flours and mix well.  now add the masalas, salt, onion, green chilli, ginger paste, 1 tbsp sesame seeds, ajwain coriander leaves etc and mix well.  Now add slowly water to make a dough like chapati.  Keep aside for 10-15 minutes.


after 10-15 minutes, knead once again.  take small portion out of it, place it on a greased plastic sheet or plaintain leaf and spread it with four fingers as shown in YouTube.  Make a hole in the center.  Slowly remove from the sheet and place it on the hot greased tava, pour oil and cook both the sides till brown spots appears and is cooked well.

Serve hot with chutney, sauce, yoghurt.



You can also make this like you make dosa/adai/uttappa by adding more water and bring to the consistency of dosa/adai/uttappa.
