SEMIYA KESARI, SEVAI KESARI

Kesari is a sweet dish made with flavours viz. pineapple or plain.  This dish is normally seen serving for any occasions or festivals.  In Tamil Nadu, this dish is part of the feast.

Sweet items are always liked by everyone, espcially, when it is mild in sweets considering the health issues.  Kesari/Sheera is made with rava also.  Here I am preparing the kesari with semiya.  Roasted ready made sevai is available in the market hence need not take any pain to roast the same.

The preparation method is like we make other Kesari but only the main ingredient i.e. suji/rava is replaced with semolina.






Let us look at the recipe now:

Ingredients:

1 cup sevai
2 - 21/2  cups water
1 cup sugar
few drops of yellow or orange colour
1/4 tsp cardamom powder
3 tbs ghee
cashews/kismish  1tbs each

Method:

In one tbsp ghee roast the cashews and kismish and keep aside.  add one more tbsp ghee and add the sevai in it.  roast the same for two minutes in the ghee. Just boil the water switch off gas add the yellow colour in it. after roasting the seavai, add the water and cook the same.  the water will be evaporated and a mass will form.  at this stage, add the sugar and cook till the sugar is absorbed in it and a thick kesari is formed.  add the cashews and kishmish, add the balance ghee, cardamom powder and mix well.  serve hot or cold as you wish.

Note:  If you want to make pineapple kesari, add pineapple essence.  If you want to add pineapple bits, then chop them, add 3-4 tbsp sugar in it and keep aside for 30 minutes.  then add the same while adding sugar.
