SOYA BEAN DRY SUBZI

Soya bean dry subzi is made with soya beans, onion and masalas.  This can be served as a side dish for dal rice, sambar rice or for phulkas along with dal.  Though it is a healthy dish, i do not like much this some how still I prepare once in a month for the benefit of calcium.





Let us look at the recipe now:

1 cup soya bean
1 onion
1 red chilli
2 tbsp grated coconut
1/4 tsp cumin seeds
a small onion chopped
a pinch of turmeric powder
salt as per taste

Tempering:

1 tsp oil
1 tsp  mustard seeds
1 tsp urid dal
a pinch of asafoetida (perumkayam, kayam, hing)
few curry leaves

garnishing

1 tbsp chopped coriander leaves

Method:

soak the soya bean overnight.
wash and pressure cook the same with turmeric powder and salt  for one whistle with water about the level of the soyabean.
drain the water.  this water can be used for making soup, dal and any gravy.
grind the red chilli and grated coconut,  cumin seeds, chopped onion  to a coarse paste.
heat oil in kadai
add the mustard seeds, urid dal, asafoetida.
 when it is done, add the curry leaves.
add the ground paste in it and saute for two minutes continuously. Oil can be added more if you wish. due to health conscious, i have added only one teaspoon.
now add the soya beans drained out and saute for a while continuously till the flavours are incorporated in it.
serve hot with rice, roti etc. garnished with chopped coriander leaves.
