We make various dishes out of Brinjal. Brinjal Goshtu, Brinjal black eyed bean curry
, Brinjal bhajia etc. Have you ever
tasted brinjal fry. It is awesome with
chapatti and as a side dish for rice too.
I try something in a different
way when my children do not eat a particular subzi. When this was made, no one could make out
what was the dish and ate happily. Now
you also try and enjoy this dish with chapatti, rice etc.
Let us look at the recipe now.
Ingredients:
1 long brinjal (purple colour)
½ tsp chilli powder (increase if you want more spicy)
½ tsp garam masala
A pinch of asafetida
A generous pinch of roasted cumin powder
1 tsp coriander powder
A pinch of turmeric powder + a generous pinch in water
Salt as per taste
2 tsp oil for shallow frying
Method:
Wash and cut the brinjal into three parts.
Then make thin slices and put in turmeric water. We are putting the brinjal in turmeric powder
water to avoid discoloration.
Remove one piece from the water, drain and coat with the masala
powder and keep aside. Repeat the process for the remaining pieces.
Heat a flat tava, apply some oil and place the masala coated brinjal
pieces on the tava and cover it. Remove the cover in between and check.
Ensure that it does not get burnt from the bottom side. Flip the same to cook the other side too. Now there is no need to cover the same as one side is already cooked. Cook the same till it is done, serve hot with chapatti with some curd or serve with rice as side dish.
