METHI PARATHA

Methi or Fenugreek has got medicinal properties.  The leaves, seeds are very useful in cooking.  Though it has a bitter taste, one must include the same in our diet regularly as it can cure various diseases.

Methi leaves have bitter taste but when it is blended with the masalas and the wheat flour, the thepla or parathas tastes so good.  Especially when you eat this very hot i.e. directly from tava to the plate, it is yummy and can be relished without any accompaniments.

It can be served for breakfast, lunch or dinner.  It is a travel handy food too.

Methi  helps  to reduce cholesterol level, lowers the risk of heart attack.  It is an excellent source of potassium which counters the action of sodium to help control heart rate and blood pressure.  It also controls diabetes, aids digestion, cure acid reflux or heartburn, prevents colon cancer etc.  My mother in law used to give us fenugreek seeds soaked in butter milk for stomach related issues.

Let us look at the recipe now:
Ingredients

Ingredients:

11/2 cup wheat flour
1 cup chopped methi leaves chopped
1 small lemon size ball of white butter
1 tsp coriander powder
a pinch of turmeric powder
1/4 tsp cumin powder
1/2 tsp garam masala
1/4 chilli powder
1/2 tsp ginger paste
a pinch of asafoetida
salt as required
2 tsp oil 
oil / ghee for making paratha
1/2 cup water

Method:
Step 1
In a mixing bowl add all the ingredients except oil and water and mix well.  Now add the water and make a dough out of it.  Add two tsp oil and knead the dough again and keep aside for 10 minutes.
Step 2

 Divide the dough  into 9 equal portions.  

Step 3

Take one ball and roll it by dusting some flour like the normal roti/chapati. Heat tava and put the paratha in it.  Cook both the sides till brown spots appears.  Apply ghee or oil as you wish and cook for another two seconds both the sides.  Your parathas are ready.

How to serve:

Serve hot with sauce, chutney, aavakai-pickle-aavakai-mangai-aavakai, instant  mango pickle,  mango-jam-mango-chutney-mango-spread  instant-sweet-lime-pickle lime pickle, curd etc.

Note:  Spice level you increase according to your requirement.  the spice level mentioned above was perfect for us as we are using pickle too along with it.  

You can also use curd for preparing the dough. 

While rolling the paratha, you can sprinkle some white sesame seeds or kalonji on top of it, if you like.

The parathas can be rolled like chapati or apply oil, fold it and make the triangular shape and cook.
