VEGETABLE BIRYANI can be made very easily if you have got vegetables like carrots, beans,green watana, onion, cabbage etc. It is an easy way to make the children all the vegetables.
Let us have a look at the recipe now.
Ingredients:
1. 1/4 kg basmati rice
2. 3 sliced onions
3. 1 tsp ginger paste
4. 1 tspgarlic paste
5. 2 tomatoes
6. 1/2 tsp chilli powder
7. 1/4 tsp turmeric powder
8. 1/2 cup fresh curd
9. 1 1/2 tsp shahi biryani masala (i used Everest)
10. dry fruits viz. Cashewnuts, kismish
11. 1/2 cup milk
12. 3 tbsp oil
13. 2 tbsp ghee
14. 1/4 cup carrots
15. 1/2cup green peas
16. 1/4 cup cauliflower
17. 1/2 cup french beans chopped
18. 1/2 tsp garam masala
Method:
1. Par boil the rice and keep aside.
2. Par boil the vegetables separately and keep aside.
3. Heat oil in kadai and fry the onions.
4. Make puree of tomatoes and keep aside.
5. Add the ginger garlic paste, tomato puree, chilli powder and turmeric powder.
6. Cook the same till oil separates.
7. Now add the fresh curd, shahi biryani masala and cook for two minutes
8. add the oar boiled vegetables and salt to taste.
9. Grease a bowl with ghee, spread half the rice, make a layer of vegetables on top of the rice.
10.Now add the remaining rice by making another layer on top of the vegetables.
11. Now add the ghee, 1/2 tsp garam masala and 1/2 cup milk on top of it, cover and heat the same for 15 minutes on low flame. roast the cashew and kishmiss. garnish with it.
12. serve hot with papad and raita.
